Tea Time

Hello Everyone!

I've been having a pretty relaxed, lovely day. I only had to go out once today so I was nice and cozy in my house. Around lunch time my family left to go to a kid's birthday party so I was home all alone. I cooked, cleaned up a little bit, danced around my kitchen (a rare occurrence since I usually do it when no one's around), and checked the blogs.
I didn't sleep in much today but that's alright since I went to bed pretty early last night. I wasn't really tired but I want to catch up on my sleep before this busy week starts. I came downstairs are started making breakfast right away...I couldn't wait to have this Blueberry Blended Grain Bowl! I used 1/4 cup wheat berries, 1 Blueberry Coconut Yogurt (!), 1/4 cup blueberries, and 1 tbsp White Chocolate Wonderful PB. It was my first time trying the yogurt and I really liked it! It had great flavor. There were some things I didn't really like about it though...only 1 g of protein! It also has a lot (20-ish g) of sugar in it. The soy yogurt I get (WholeSoy&Co) only has 12g of sugar and 6g of protein. It was a nice change though and the wheat berries thickened it up to make a nice, creamy morning treat.
My mid-morning snack was a Walnut & Date KIND bar. It isn't vegan (because of the honey) and it has more hard to read ingredients than a Larabar but I thought it was pretty good. I forgot how much I like the taste of walnuts and the dates made it just sweet enough. Overall, I don't think I would buy it again...it just wasn't anything special.
Just look at that yum-licious wrap! Lunch was highly enjoyable and the flavors were just incredible. I used 1 Flatout Wrap, 2 tbsp Hummus, 1 tbsp BBQ Sauce, 1/2 cup baby spinach, and 3 leftover Chickpea Cakes. Like I said...incredible. I also had a glass of Almond Milk and a juicy pear.
What is this you ask? Well...to ED's dismay...it's my own Homemade Cinnamon Agave Almond Butter! I followed this recipe subbing agave for the maple and only made about 1/2 a batch. I blended them in batches in my mini-fp and stored it in this empty jam jar (I've been keeping all my jars lately for food storage). Ed doesn't trust the food labels on nuts. I can't measure them out correctly without a scale and they can't be measured like nut butter can. But since I'm supposed to be saving money on groceries, I decided to put those almonds in my fridge to good use (since I never eat them raw). This butter turned out fantastic and I can't believe how easy it was.
After making the nut butter, it was almost snack time. I decided I would have a bit of the nut butter..but on what? That's where River's Granola Muffins came in! I made them with GF AP Flour instead of WWP, used Nature's Path Hemp Plus Granola (the last it, oh no! I must get some more as that is my favorite granola ever!), 1 pkg. stevia instead of sugar, and all almond milk instead of the soy and coconut milks. I thought they wouldn't turn out since the batter was so runny but they were perfect! So tender and moist, with a hint of sweetness and a nutty crunch. These would be perfect for any time of the day. I topped one of the muffins with about 1 tsp of the homemade Almond Butter and I really loved the flavor. It tasted so rich and bold, with a nice crunchy texture. I don't know if it beats my favorite Vanilla Almond Butter but it was a nice change. I also had a cup of Tahitian Vanilla Hazelnut Yogi Tea w/ 1 tbsp Almond Milk. This was delightful, so warming and full of comforting aromas. Mmm.
This was such a delicious dinner! I made Teriyaki Rice and Vegetables as a quick and simple meal tonight. The grain was rice of course, veggies included corn, red pepper, sugar snap peas, and carrots, and the protein came from the baked tofu (plain) and edamame. I topped it all with about 1 1/2 tbsp Teriyaki Sauce and it was finished in a flash. Ever since becoming vegan I'm amazed at what delicious foods I can create with such little ingredients. No more processed foods with ingredient list's as long as the Twilight series. haha

You Are My Sunshine

Does anyone remember that song from when they were a kid? My mom used to sing it to me when I was sad, upset, or couldn't get to sleep. It holds such a special place in my heart and I smile every time I hear it.
Nothing like a Tofu Scramble to celebrate the beginning of a three day weekend! I used Bianca's recipe this time to change it up and I really liked the addition of non-dairy milk! It made the scramble super creamy and delicious. I quartered the recipe except the veggies because I like a lot in my scrambles. I also had an Ezekiel English Muffin on the side with 1 tbsp White Chocolate PB. Like little pillows of heaven =)
I actually slept in later this morning (a first!) so I wasn't as hungry for a snack before lunch. I did have a pear and 3 dried apricots though, to keep my metabolism up.
Oh Caroline! How do you think up these amazing meals?! I made the Citrus Soy Tofu and Cilantro Lime Bulgar today for lunch and it was so good. I made a couple changes here and there and added collards but the flavors were just fabulous together and left me feeling energized and refreshed. Afterwards I had a handful of cereal which I will review later in this post.
Decadent, yes? I can't take all the credit though, the base is the luscious Chocolate Mousse from Chocolate Covered Katie, and the addition of barley, stevia, and nut butter is from Heather's blog. Together these two idea make for one creamy, dreamy snack. I couldn't ask for anything better.
After a trip to Trader Joe's (I had to get some more Better n' PB, I was all out!), I was super hungry so I came home to make this Snack Plate dinner. I had 1 WHOLE bunch of kale (made into kale chips...these are more filling that you would think!), 1 pear, 1 pkg Dora Edamame, and 1 slice sprouted grain bread (a new brand that isn't pictured here but will be reviewed in the future). This meal had 10g of protein which is one of my new goals from the dietitian and even though it doesn't look like much, it had a grain, calcium, veggies, fruit, and healthy fats (from the edamame).
You didn't think I'd leave out dessert did you?! This is actually one of the reasons I post so late now, I just have to post them! Tonight I had 1 cup Kashi Honey Sunshine Cereal (I know it's not vegan b/c of the honey but I don't have a problem consuming honey), 1/2 cup almond milk, and 2 tbsp Better n' PB. HOLY YUM! This combo was scrumptious! So sweet, crunchy, and chewy. I didn't want it to end.

Now about the dietitian...it went great! I'm not going to tell you all the details because it's nothing too exciting but I listed the goals for the next 2 weeks on my sidebar under the About Me section. I think that will help me attain those goals because I will always be able to see it and you can all remind me about them if you notice I'm lacking. If you have any questions about how it went, you can e-mail me personally...I'm open to any questions =)

I think I'm going to relax, maybe watch a movie, and get some sleep. I've been looking forward to just spending some "me" time so have a great night everyone!

Cookies for Breakfast

I've got to get ready to leave for the dietitian pretty soon so I've got to make this kind of short.
I know it seems a little odd at first but trust me, these Thin Mint Oats were delightful! Inspired by Miss Chickpea, I whipped these up last night and they were ready to be devoured this morning. I used 1/2 cup oats, 1 tbsp cocoa powder, 1 pkg. stevia, 1/2 cup almond milk, 1/2 tsp Peppermint Extract, let that sit overnight, then in the morning I heated it up and added 1 Jocolat Mint Bar and another 1/2 cup almond milk. The reason for the extra almond milk was that the oats got really dry and clumpy. Next time I will add the cocoa powder in after I heat them up, for a creamier consistency. The taste however was amazing and I felt so refreshed after finishing this bowl. This is also my first time trying a Larabar/Jocolat bar in my oatmeal! I didn't think PB would be great with mint but I still needed a source of fat in my breakfast. I crumbled 1/2 in before I cooked it and topped it with the other half. I also tried it plain and while it didn't have as strong of a mint taste as I was expecting, it was very delicious and I would buy it again. Speaking of Jocolat bars...Chocolate Covered Katie (previously Chocolate Covered Vegan) is giving away a WHOLE BOX of Jocolat bars! You can enter her contest here by simply leaving a comment and following her further directions.I really needed this snack today...I eat my morning snack after gym class to boost my energy but I usually don't really need it as I'm not hungry (must be those oats). I guess today my breakfast wasn't high enough in calories or my gym class was too much (even though we only did an ab workout and stretching) because I was straight up shaking. As soon as I sat down into my next class I ate 1/2 of this Banana Nut Bread Clif Bar and immediately felt better. Not only because I had food in my belly but because this bar was AMAZING! It wasn't too sweet and had such a strong banana flavor. I'm so glad I've decided to try Clif bars again because I'm really finding some that I like.
As I started to walk towards the door out of school, I noticed it was POURING rain outside. What?! But it was so lovely this morning! I called my mom and thankfully she was able to come and get me. I got a head start on my lunch too. I made a Flatout Pizza! Using 1 Flatout Multi-grain wrap, 2 tbsp BBQ sauce, 1/2 onion-caramelized, 1 roasted red bell pepper, baby spinach, and pineapple, I baked this sucker at 400* for 10 minutes until the bottom was nice and crispy. I've never had pineapple on pizza before and I love it! Especially with the BBQ, mmm.
I wasn't feeling the gym today (because of what happened earlier) so I just relaxed for a bit. At snack time I scrounged around and decided on a good ol' bowl of PB Puffins. I had about 2 cups (finished my last box!) and also had a tbsp of White Chocolate PB. Freaking delicious. The End.

My advisor said he made the power-point but the school had a video planned so we have to do it next week. I'm not too bummed though because I've been planning a little something myself. I think I'm going to write about my story and hand it out (without saying who wrote it) and see what they have to say. I would really like to learn other people's perspective on this issue and then I will reveal it's my story and answer questions. Sound good?

I need to go make my smoothie so not to miss my snack, I get a day off tomorrow...3 day weekend! Yay!

Better In Time

Do you all know that song (in the title) by Leona Lewis? I was just listening to it today and really connected to some of the lyrics...

I know it's supposed to be about an ex-boyfriend but I can totally apply it to my ED. I have days where I think I won't be able to ever be who I used to be without ed. Sometimes I feel really attached and like I don't want to let go but I know I have to so I can be happy. So I can smile, because like the song says...I DESERVE to. It's going to take time and it's not going to be easy but I am ready and willing to give it my all.
So breakfast was pretty amazing. First I toasted an Ezekiel English Muffin (which I just picked up from the store), spread it with 1 tbsp Dark Chocolate Dreams PB (I'm just guesstimating here, it was the last of the jar!!!), 1 pear, and 2 tbsp Nature's Path Agave Granola. Messy to eat but delicious anyway. I really loved the doughy texture of the English muffin and the granola added a crunchy contrast to the creamy nut butter and the soft pear. I can't believe this is the 2nd jar of nut butter I've finished! I would have never imagined this a couple months ago, but now I feel so much better for it, and I couldn't imagine life without nut butters ever again. And you know what? I went back for another tbsp White Chocolate Wonderful after that, because I can.


Sorry no pic of the morning snack...I just had the other half of my Choc. Chip Clif and 1/8th of a ProBar.
Lunch was simple to make since I prepared it the night before. I made the Crispy Cajun Chickpeas Cakes from Vegan Dad and kale chips and a glass of Almond Milk. The cakes turned out spectacular! It was like a V'Con chickpea cutlet but with veggies mixed in and a hint of smokey, hot spice in it. Delicious. I was eager to eat so I just doused it in ketchup and dug in, which explains the lame picture.
Hey VeggieGirl, look what I gots! PUFFINS! Oh yeah, after my 45 minute walk on the treadmill (no weights for me today) I got home and mixed this up. 1 soy yogurt, 2/3 cups PB Puffins, and 2 (yes I said 2!) Almond Clusters. This was perfect. Sweet, crunchy, smooth, and nutty. Just what I needed.
Same salad as everyday this week, it's just so delicious! If you need reminding it's 1 cup baby spinach, 1 slice firm tofu (baked at 400* for 40 min w/ BBQ sauce), 6 baby carrots, Dora Edamame, 1/8 cup corn, 1 pear, and 2 tbsp hummus. I also had 1 slice of ezekiel. I don't know when I'll be sick of this but hopefully not anytime soon, it's fabulous.
Look, I'm totally rockin' the purple in this dessert tonight! Inspired by Heather's Blueberry Pudding, I made Blackberry Pudding! Using 1/3 cup lite silken tofu, 1/2 cup blackberries, I blended those together with my handblender, mixed in 1/2 scoop Chocolate protein powder, and topped it with 2 tbsp Better n' PB and 1/4 cup Graham Cereal. Ooo, baby this was a winner. I bet it would be even better with a grain added but I didn't have any on hand and I think that would be too heavy for a night snack.

At school today I was sitting in advisory(like homeroom) when my teacher asked us for ideas to do instead of just sit around. He's a really cool teacher and we never do the lessons the school plans for us because let's face it...they're lame! After class was over I went over to talk to him and asked if we could do something tomorrow or even next week (since I don't have school Friday) to celebrate National Eating Disorder's Awareness Week. He was really open to the idea and even shared that he knew some friends with ED's. I told him about my struggle and he had asked what I wanted to do. I just gave him some website referrals and he wants to put together a powerpoint or something. Then I would participate and tell my story or chime in with my viewpoint. I want people to learn that it's not just about food and the way you look. There are mental, social, and psychological aspects of an ed that people need to hear about. I want to raise awareness and I was so proud of speaking up about it. I've already got some ideas (from my girl Amy) but I would like your feedback. I don't just want to hand out a piece of paper or bore people...I'm pretty open about everything so I don't mind explaining or answering questions. What do you think I should do?

I have an appointment with my dietitian tomorrow night at 7:30-she works nights, last time she came in early to see me-so I will try and get a quick post in before that.

Major Delays

I won't be able to to the post I was hoping to...which means pictures of pre-ed Shelby and the award will be on hold for now. My laptop is not connecting to my home computer (even though it says the signal is excellent) so I have no idea how to fix this. It's really causing problems with blogging and it's been hard to upload pictures, that's why my posts are so late lately. Also, all my pictures are on my laptop. Stupid technology =(
Breakfast is a much happier subject. I decided change it up a bit from my regular oatmeal and made this Breakfast Wrap inspired by Heather. I used 1 tbsp Naturally Nutty Vanilla Almond Butter and 1 tbsp Carob Chips on a Flatout Wrap. I put it in the oven for 5 minutes until it got nice a crispy, with the insides all gooey. I "pear-ed" it with a sliced pear and a plain WholeSoy& Co yogurt. I wasn't expecting this to be as filling as it was because it wasn't my oatmeal but I was really satisfied after eating this. The flavors weren't bad either and I can see myself adding this wrap to my daily eats, it would even be good as a snack!I was feeling spicy today so I had a Cocoa Mole Larabar for my mid-morning snack. This was the first Larabar flavor I tried and it's been true love ever since ;)
I had planned a different meal for today but since I didn't have time to prepare it last night, I just switched it with tomorrow's lunch. I made a Asian Stir-fry using 1/2 cup barley (not really Asian I guess but it was what I had on hand), 3 stalks kale, 1/4 red and green bell pepper, 3 baby carrots, 1 tbsp hoisin sauce, ginger, and pepper. On the side I had a slice of ezekiel (not pictured) and a glass of Almond Milk. I think I'm really starting to warm up to drinking Almond Milk everyday. I don't know about 3 times a day but so far once a day is really refreshing. It doesn't beat my favorite though...water! I don't know if I've ever told you guys this but I drink water non-stop throughout the day. I know your supposed to drink half your body weight in oz a day but I think I go way over that. If I don't drink enough water, I will get a headache so that's how I know I'm hydrated.

I finally made it to the gym today and let me tell you I had a smile on my face the whole time. It was so nice to get my body moving again and just enjoying the workout. I did 45 minutes walking on the treadmill and some weights, ahh.
First of all, thank you CCV! Second of all, thank you Heather! For my afternoon snack I had Carrot Cake Pudding which was inspired by the amazing chicas mentioned above. This consisted of 1 large cooked carrot, 1/3 block lite silken tofu, cinnamon, 1 tsp vanilla, 2 oz pineapple, 1/2 cup almond milk (all of this blended together with hand blender), and topped with 1 tbsp Tofutti Cream Cheese and 1 Almond Cluster. I just picked these up at Target (my dietitian said I need another source of fats in my day and she recommended nuts as a challenge instead of nut butter) and I must say they are delicious. Not too sweet and so cute in the little clusters, I'm glad I bought these and they are made with 100% natural ingredients.
Thought I'd mix it up a bit with my Salad tonight as I already had carrots twice today. This baby included 1 cup baby spinach, 1/2 cup sweet white corn, Dora Edamame, 1 pear, 1 slice of tofu w/ BBQ sauce, and 2 tbsp hummus. I can't get enough of this combo and I really liked the variation tonight.
I was planning on a protein shake tonight but after seeing this post on blog, I immediately changed my mind. My night snack was 2 Wheetabix Biscuits, 3 tbsp Better n' PB, and 1/2 cup almond milk. I loved how the bottom of the biscuits got all chewy and soft while the tops stayed nice and crunchy. Such a great snack, yum!

I hate teasing you all like this and I hope my computer gets fixed soon. I wish everyone a great, relaxing night! <3

Apple Pie and Chocolate Chip Cookies

Apple Pie Oats were today's mixture and I used 1/2 cup oats, 1/2 cup Almond Milk, cinnamon, allspice, nutmeg, cloves, 1 apple, 1 tbsp Cinnamon PB, and 1/8 of an Apple Cinnamon Crunch ProBar. Chewy, crunchy, creamy, and smooth, this mixture was a delight on the taste buds. This was my first time trying a ProBar and I have to say it was really delicious. I only used 1/8th of the bar because they are actually meal replacements. They would be perfect for on-the-go breakfasts or, like me, a scrumptious oatmeal topper. Since my oats were lower in calories today I also had my last 2 mini oat bran scones.

Mid-Morning snack was half a Chocolate Chip Cookie...I mean Clif Bar. I've had trouble in the past with Clif bars, as I often find them too sweet to eat as a snack. I've only found a couple I really like but this post on Miss Chickpea's blog has inspired me to try more. I really loved this flavor and it's really like eating a chocolate chip cookie, but much healthier! I also think eating half is the way to go, it makes it so much more enjoyable.

I haven't been feeling well today. Stomach pains have been attacking me since this morning after breakfast...which I sometimes still get occasionally and now I have chest pains. Despite the stomach pains, I still managed to get down a small lunch. I find that when I get these pains, it has nothing to do with my hunger because I can still eat food with ease...it's very strange. Anyway, today's lunch was a Hummus + Spinach Sandwich with sliced apple (the rest I ate on the side) and 1 glass of Almond Milk. Then I had another tbsp Cinnamon PB! I find it easier to space the tbsp out in my day instead of all at one time which still freaks me out.



After that came trouble. I wanted to go to the gym but my mom had other plans, needed me to babysit, had to run an errand so I didn't end up going. This caused a fight with my mom because I want to go everyday this week. I haven't gone since last Wednesday and I feel like I'm fine going everyday. It's nothing too strenuous...only 45 min walking on the treadmill and weights. But she is totally against it. I hate arguing with her but really I love going. I never really think about it as purely burning calories. I love the way I feel afterwards, I love my confidence, I love my buns of steel ;), I love how happy I am knowing I'm doing something good for my body. I rarely ever feel like I'm pushing too hard or forcing myself to go. My mom is also freaking out because I do yoga in the morning too. It's only 20 minutes though and it's mostly for stretching purposes. I've already told my dietitian how much I exercise and she didn't oppose to it at all. I do have an appointment with her Thursday so I will talk to her then about it.

My afternoon snack was inspired my the lovely Erin. 1 cup Pumpkin mixed with 1 scoop Chocolate Protein Powder makes for a delicious, easy snack. The flavors were fabulous and the texture was creamy and smooth. Although the texture did get a little monotonous after a while...I think I will just add cereal next time. I might also just have this as a breakfast food as I found it super filling for a snack.


Dinner was the same as yesterday (minus the apple and scones) and dessert as the last slice of my Chocolate Pumpkin Loaf!!! Oh no! I must make some more soon, that stuff is pure heaven.

To celebrate Nation Eating Disorders Awareness Week, I've painted my nails purple and will be wearing some form of purple all week long. I'm ready to beat this, I'm done being sick, I want to find out who I really am and be the real Shelby. My next post will feature an award and maybe some pictures of me pre-ed...

Oh and P.S.- What's with the Gossip Girl re-runs?!! I'm so mad!

On the Trail

I've got to hurry this up...I've got to watch the Academy Awards, plan meals, pick an outfit, finish laundry, clean my room, and go to bed! Good thing Monday's are late start days =)
A tried a new combination of oats today. Trail Mix Oats! I used 1/4 cup steel cut oats, 3/4 cup water, 1 tsp vanilla, 1/2 serving Pretzel Thins, 5 dried apricots, 1 tbsp almond butter, and 1 tbsp carob chips (for you VeggieGirl!). This is for sure one of my new favorites. The textures were crazy delicious together and the flavors were just perfect.
I decided to make something simple for lunch. Spicy Teriyaki Chickpeas and Kale Chips were on the menu. Instead of pineapple salsa for the chickpea dish, I just added 1/2 cup chopped pineapple...this is a must to balance out the spicy flavors of the chickpeas. I was very full after this meal but still felt really good.
I tried a new cereal today! It's the Pumpkin Raisin Crunch from Nature's Path. I'm so glad I bought this cereal because it was amazing. I think I like the Red Berry Crunch better but this was still very delicious. I used 1 cup almond milk (which is about 3/4 cups more than I usually use) and 1/2 cup afterwards to please my mom. She's really pushing the non-dairy milk everyday.

I haven't worked out at the gym since Wednesday!!! Thursday was my day off, Friday I had a therapist appointment, and this weekend I just had no time. I'm planning on going tomorrow but it was kind of nice not to go for a little bit. My joints feel a little better too. My favorite salad combination was my dinner again. 1 cup spinach, 1 pkg edamame, 1 apple, 1 slice tofu (with 1 tbsp BBQ sauce, 2 tbsp hummus, and 5 baby carrots. I've decided I can't give up carrots so I've just limited them to once a day.
Mmm, this Chocolate PB Shake was fabulous! I used 1 cup water, 1 scoop Chocolate Protein Powder, and 2 tbsp Better n' PB. I forgot how much I love this treat!
EDIT: For everyone who is wondering, I use Whole Foods Brand Soy Chocolate Protein Powder.

Budgeting

Another bowl of luscious blended grains! Blended Barley was today's grain of choice and in it I mixed 1 soy yogurt and 1 tbsp Almond Butter. Simple and so delicious. It was pretty filling but I wanted something crunchy afterwards so I had 1/2 cup PB Puffins.


No mid-morning snack, I ate breakfast pretty late and wasn't hungry. I went to the health food store instead and got some great deals. I love this store because they always have sales and the sales last all month. I stocked up on hummus (I bought the last 3!) for $1.99 each, and then I bought some almond milk also for $1.99 each. I got a couple other things as well but you will just have to wait and see those.
I started making lunch as soon as I got home. This easy recipe is from Happy Herbivore and it's the Red Lentil Dal with Saag and Barley (I was too lazy to make rice and I already had plenty on hand). This recipe was so easy and flavorful! Wow, I was blown away. Thanks for the awesome recipe Lindsay!


Whole Foods was the next stop on my list...but I had to make sure to stay on budget. I only bought a couple new items (they will be showing up soon!), and ended up spending just $25! I was so proud of myself and I think that's the least I've ever spent there!
When I got home I needed a snack so I had some Hummus, Pretzel Thins, and 1 cup Almond Milk. I was going to have baby carrots too but my mom said I couldn't. She's noticed an orange tint to my skin and thinks it's from too many orange foods. I'm still not sure if that can actually happen but it's going to be really hard to not eat orange foods. I haven't bought any sweet potatoes (I did have b-nut squash the other night though) but I already had that lentil meal for lunch which was undeniably orange...and then there was dinner...
This Salad was composed of 1 cup baby spinach, 1 pear, 1 slice of tofu (baked with BBQ sauce), 6 baby carrots, and 2 tbsp hummus. I find it hard to eat salads without carrots haha they are one of my very favorite vegetables. This meal was totally worth it though, yum!

Dessert/Snack was the same as yesterday. 1 slice Chocolate Pumpkin Loaf, 2 tbsp Better n' PB, and 2 tbsp Nature's Path Agave Plus Granola. I'm actually eating it right now, and it tastes as good as it looks!

And finally...Bag Tag! I was tagged by Brooke a while back and finally have the time to reveal, so here are the rules.

Here is the bag I've been using on and off for about 6 months. It's Botkier from Target and I think it was around $40. I love how simple it is yet the studs make it stand out. It holds a lot despite it's size and while it's not the most expensive bag, I love it. My mom is totally opposed to buying me a designer bag so I guess I will have to wait until I save up my own money.

Inside is a calculator (that and many pens are stashed inside because I keep my school supplies in there as well), cheetah-print earmuffs, wallet (also from Target, what would I do without that store?), keychain, mirror, comb, Dr. Bronners lip balm (my favorite brand), hand sanitizer, tissues, Alba Cocoa Butter Hand Cream (this smells like marshmallows!), Fekkai Glossing Cream, and my pink Motorola Razr.

Now I'm going to relax, it's Saturday night but I'm ready to sleep!

Blend it Baby!

Mmm, this breakfast was inspired by Heather and the method is from the wonderful CCV's blog. I took 1/4 cup (dry) cooked wheat berries, 1/2 cup almond milk, and 1/2 scoop chocolate protein powder and blended it all together in my mini-food processor. In the morning I added a tbsp of Cinnamon Raisin PB. This was so unbelievably delicious...it will be a new staple breakfast from now on. For the small amount it made, it was very filling! I'm thinking it was the texture, protein powder, and PB combo. I did have a mini oat bran scone as well for more calories.
My bar of the day was a Ginger Snap Larabar. I didn't really like this flavor the first time around because I had a huge stomach ache...oddly enough, I had a stomach ache today too. It did go away before I ate this bar and I actually found out that I liked it. It tasted just like a homemade cookie! Oh no! I'm out of bars now, must go shopping. Whole Foods anyone? Hopefully...I don't get to go often though because I usually spend so much. I know it's hard to control yourself at WF but how do you all keep a budget? I want to show my mom I can be trusted, plus I am in need of some new clothes and I don't want to take away from those funds!
I was looking forward to this lunch since this morning. Particularly because it's breakfast food! I made a Tofu Scramble (broccoli, carrots, red pepper, 1/2 tomato, onion, garlic, tofu, 2 1/2 tbsp nooch, italian seasoning, and pepper) with a side of dry ezekiel toast. Mmm, this is one of my favorite meals at any time of day! It's nutritious, tasty, and so easy to make.
I had an appointment with my therapist today at 2pm so I brought my snack with me to eat at 3pm on the way home. I mixed 1 soy yogurt with 1/2 cup pumpkin, 1/2 cup graham cereal, and cinnamon. By the time I started eating this, the cereal had gotten all soft and soggy. Scrumptious!

After a little yoga I made the same dinner as yesterday (my new favorite salad combo!). Then I did a couple things on my to-do list and had this for dessert.
1 slice Chocolate Pumpkin Loaf, 2 tbsp Better n' PB, and 1 1/2 tbsp Nature's Path Agave Granola. This is one of my favorite late night snacks but I'm almost out of the loaf. I must make some more soon, it's amazing.

I'm off to finally relax...this week has been way too long.

Quick Like a Bunny

I have a paper due tomorrow that I haven't even started on so I'll try to make this post quick. I'm so glad it's almost the weekend.
I had a Granola Salad a la Erin this morning for breakfast. I used 2 tbsp soy yogurt, a couple drops of lemon juice, 1/2 tbsp agave, 1 tbsp cinnamon PB, 1/2 cup Graham Bumpers, 1/4 cup Agave Plus Granola, 1 pear, and topped it all off with 1 tbsp Better n' PB. Mmm, this was so sweet and had so many textures. I ended up eating the rest of the yogurt as well and then I was satisfied and ready for school.
Mid-Morning Snack = Cinnamon Roll Larabar. Surprisingly this isn't one of my very favorites. Don't get me wrong, this flavor is really delicious but I just think there are better ones.
* Recycled picture alert!* I didn't get a picture of my lunch today because I was too lazy. I had a hummus/spinach sandwich and baby carrots for lunch today (no cukes). I also had my LAST 2 squares of dark chocolate. I really enjoyed the chocolate, thanks again Danielle!!!
One of my goals from the dietitian was to add more non-dairy milks to my diet for calcium and calories. After lunch my mom was bugging me to drink my milk so I had a glass of Almond Milk w/ 1 1/2 tbsp Better n' PB (I've been craving this stuff all day!). It was really weird drinking it because I never drink anything but water but I guess I can get used to it.

Another luscious salad was on the menu tonight! I used 1 cup baby spinach, 1/4 cup edamame, 1/2 butternut squash (in fry form), 1/2 cup roasted broccoli, 5 baby carrots, 1 apple, and 2 tbsp hummus. I used to hate tossing my salads because everything falls to the bottom but that is totally the best part! It saves the best for last =)

I'm just finishing up dessert, a Cherry Chocolate Smoothie. I don't have a picture because it isn't really too photogenic but I used 1 scoop Chocolate Protein Powder, 1 cup water, 1 Wheetabix Biscuit, and 1/4 cup frozen cherries. Yum.

Now I really have to start my essay, I've only gotten the intro done and I need 6-7 pages. Yikes.

Two is Better Than One

Happy Humpday!
I hope everyone's day has been going well, my day has been alright-not as busy as yesterday-but I've been struggling with ed's voice in my head. I counted calories the other day and it was way higher than expected, I started freaking out and I haven't been eating as much as I normally do. I've also been really paranoid with calories and I've been adding up everything almost everyday. I know part of recovery is going through these ups and downs but I just wish I could wake up one day feeling good in my own skin and living life at a healthy weight. It's not going to be easy but I am SO determined to beat this, I've just got to listen to my own voice instead of ed's.
Breakfast was Tofu Oatmeal, inspired by Erin. I used 1/2 cup oats, 1/2 cup almond milk, 1/3 block silken tofu, the usual spices, and 1 pkg stevia. Then in the morning I pureed it all and topped it with a diced pear and 1 tbsp Cinnamon Raisin PB!!! The tofu (which I didn't puree all the way because I was lazy), added such a great texture and creaminess to the oats and it added extra calories to my meal. I think I'm going to start using only 1/2 a pkg of stevia...it's making my oats have too strong of a taste and I prefer my oats only slightly sweetened. Also, I finally found PB&Co Cinnamon Raisin PB yesterday! I was seriously so excited, I think I gasped right in the middle of the aisle. Ooo, it was so worth the money and guess what...after I finished my oats, I had another tbsp of PB!!! I think it was because of the lower fat content of this PB, but I felt so accomplished after eating this. Now I won't promise that I'll be eating 2 tbsp everyday but let me tell you that the title o this post it true. I've been pretty okay with upping my fats lately because I've been doing some reading and
1.) I want healthy skin, nails, and hair
2.) I want to grow taller
3.) I want to be able to focus in school
4.) I want to have a healthy heart and organs
5.) I want to LIVE!
Everytime ed tells me to skip the fats, I think of all these reasons.
Mid-Morning snack was a Lemon Larabar! I haven't had this flavor in a long time and I've missed it. It's so fresh tasting and soft, the perfect consistency.
I wasn't too hungry coming home from school (it's all those healthy fats!) so I made a Waldorf Wheat Berry Salad (recipe from SBiTK). I used 1/4 cup (dry) wheat berries, 1/3 block tofu (mashed in place of mayo), 1 apple, 1 stalk celery, 1/4 cup cranberries, 1 tbsp rice vinegar, and pepper. Even though I hate raw celery, it totally completes this salad. I also had 1/2 slice of ezekiel bread and 2 squares of dark chocolate.
Here's my after-gym snack: a Yogurt Smoothie (1 soy yogurt, 2/3 cup strawberries, water) and 2 Mini Oat Bran Scones from Say Yes to Salad. I made some changed to the recipe...I used soy yogurt instead of oil, agave instead of brown rice syrup, and omitted the raisins. I really liked the scones, they weren't too sweet and had a very delicious texture. These won't be around for long! I've been having troubles with the gym lately...I've been going everyday to do 45 minutes of walking on the treadmill and weight lifting. I was about to go yesterday and my mom stopped me and said I couldn't go because I was being obsessive. I'll admit I do go because ed wants be to go but I also love to work out. I love the feeling afterwards, I feel like I can get away from the house, I feel so much more confident with my body, and I hate sitting around since I'm not the most bootylicious babe around and my butt starts to hurt after a little while ;) Any advice on this? My mom wants me to go every other day but I want to go everyday and take a break once a week. Do you think I should be exercising at all? Am I being obsessive?
Wow, this was one of the best salads I've had in a while. On a bed of lettuce and baby spinach, I added 6 diced baby carrots, 1/4 cup edamame, 3/4 cups roasted broccoli, 1 slice BBQ tofu, chopped, and 2 tbsp hummus. I didn't want this salad to end, all the roasted veggies, crisp lettuce, and creamy-crispy tofu made the perfect combination. I may not even buy dressing again, hummus is just so good as a dressing!As I type, I'm enjoying this late night snack. 1 slice of Chocolate Pumpkin Loaf (I froze some slices when I made it) topped with 2 tbsp Better n' PB.

As for the new dietitian: I really liked her! She was so friendly and I didn't feel awkward talking to her at all. She made me feel really comfortable and we set small goals instead of a bunch of hard goals like the last woman did. My two goals are adding a glass of soymilk with every meal, and to add another serving of fats. I felt comfortable setting these goals because it wasn't too much at one time. She was also really knowledgeable in my lifestyle and has a couple other clients that are vegetarian. I also think she acknowledged my accomplishments with my late night snack and addition of PB. I left really happy and confident with this dietitian and I'm looking forward to seeing her again. While I was totally opposed to following the other dietitians recommendations, I actually want to try these out and add them to my everyday meals.

If I owe you an e-mail I will for sure get back to you either tonight or tomorrow. Right now I'm going to finish my homework and get ready for bed. It's almost the weekend =) Oh and bag-tag tomorrow, I promise!!!
P.S. I just noticed that I've been getting chest pains at night, kind of scary because I thought I was done with those.

So Little Time

I'm so sorry loves! Time totally got away from me yesterday and I'm even pressed for time right now. I've been literally running around the house trying to get things done so I will keep this post as short as I can and tomorrow I will try for a longer post. I'll be adding some things about me, revealing some feelings I've been having lately towards food, finally doing my bag-tag, and describing my experience with the new dietitian I went to yesterday.
I had a day off Monday but I didn't plan anything fancy, I just wanted another Yogurt Bowl! 1 cup PB Puffins, 1 soy yogurt, cinnamon, 1 tbsp Vanilla Almond Butter, and 1 pear. There is only one word to describe this bowl...ORGASMIC! I would eat this everyday if I could.
Mid-Morning snack was a ChocChip Trailmix Purebar. I LOVED this flavor. It was so crunchy and the little chocolate chips added just the right amount of sweetness. This is my 3rd Purebar flavor and they still haven't let me down!
Lunch was the same thing I had the other day...a Bean Burger on 2 slices ezekiel with baby spinach, BBQ sauce, ketchup, Rice Cheese, and a carrot on the side. Not pictured is the 2 squares of dark chocolate I had afterwards.


Afternoon snack isn't pictured because I made it really quick before I left to see the new dietitian. All I had was a serving of TJ's Pretzel Thins and 2 tbsp Hummus. YUM!

It was a little later by the time I got home so I just fixed myself a snack plate of 1/4 cup edamame, 1 carrot, 1 apple, and 2 tbsp hummus. Umm, has anyone noticed I've been obsessed with hummus lately? I just love the Oasis brand I found!
Later that night I went to see a movie by myself! I didn't end up going Sunday Night as the next time was a little too late so I just went Monday night. I brought this little snackie with me so I could have my late night snack. I brought a Honey Graham Zbar and 2 tbsp Better n' PB for dipping. LOVE! Oh, and the movie I saw was Confessions of a Shopaholic. I ADORE the books so I was really looking forward to the movie, but it wasn't that great. I was actually pretty bored. I guess I was just used to the story in the book and all the details that I just missed it in the movie.

Now onto today's eats!

PB Pretzel Oatmeal! I used 1/2 cup oats, 1/2 cup almond milk, cinnamon, 1 serving TJ's Pretzel Thins (crumbled), and 1/2 tbsp each White and Dark Chocolate PB. Ooo man, this was amazing! I love that sweet/salty combination.
Ack! Please ignore the ugly nails...I have to find time to paint them. Anyway, here is my mid-morning snack. A Peanut Goji Glow thinkFruit bar. Now, I don't think I like it as much a my beloved Larabars but it was a pretty good replacement. I love goji berries and peanut butter so this mix was delicious.
Bread Soup again for lunch. I made this a while back and this time I just added about 1/8 cup kidney beans (because that's all I had leftover in the fridge). 2 squares of dark chocolate followed this meal to end lunch on a sweet note.
Afternoon snack was a new cereal (!) Graham Bumpers and 1 soy yogurt. I thought the cereal was just okay. I was expecting a more "graham" taste but it was kind of subdued.

After my snack I went to Target to stock up on veggies and other things. I found a new product that I've been dying to try and it will be in tomorrow's post so look out!
When I got home I fixed myself a nice big salad. I used 1 cup lettuce, 1/2 cup baby spinach, 6 baby carrots, 1/4 cup edamame, 1 tsp wheat germ and 2 tbsp hummus. So simply and delicious, I can't believe I've never used hummus as a dressing before!
Bad lighting but amazing snack. I just finished this and let me tell you I love this combo! I used 1 apple, 2 tbsp Better n' PB, and 2 tbsp Nature's Path Agave Plus Granola. A perfect ending to this crazy day.

Now I have TONS of homework to do, article summaries, writing papers, and studying for a math test tomorrow. Hopefully I can get it all done and still go to bed at a reasonable time. I will try to catch up tomorrow granted I don't have too much homework. Even if I'm not commenting, I'm trying my best to keep up and I still love ya'll!!!

A Little Snacky

I really didn't do much of anything today, just relaxed, caught up on some reading, and went to the gym. Thank you all so much for your suggestions about what you would like to see on my blog, hopefully I will be able to let you all know more about me without being too boring!
I was so excited to make this breakfast! This Yogurt Bowl consisted of 1 WholeSoy&Co yogurt, 1 large pear, 1 1/2 cups PB Puffins, and 1 tbsp Vanilla Almond Butter. Such a simple, quick meal...yet the flavors are so complex and combine to create pure bliss on the tastebuds.

Even though I had plenty of time to cook, I wasn't feeling like making an elaborate lunch today. I wanted an old favorite...a Spinach and Hummus Amy Sandwich. I paired it with 2 sliced carrots and an apple. For dessert I had 2 squares of dark chocolate and a slice of Chocolate Pumpkin Bread from the freezer. My throat is getting better with the chocolate, I think it was just because I wasn't used to it.

I went to the gym after digesting a bit and got in a pretty good workout. I did 35 minutes on the treadmill (walking w/ intervals and hills), weight machines (legs, arms, obliques), and 10 minutes on this cool stationary bike. It's got a big screen in front but instead of a TV, it's like a video game. You pick a level, trail, and steer your bike as the pedals adjust automatically with the hills on the screen. It's really fun and you forget your at the gym working out. I didn't stay on for long because my lack of junk in the trunk prevents me from sitting for a long time. I wish all gym equipment was that fun!
When I got home I made myself a snack plate. 1 sliced carrot, 2 tbsp hummus, and a serving of Trader Joe's Pretzel Thins. I used to eat these all the time in the little Sabra's packages and when I saw them at TJ's I was so torn. Ed did not want me to eat "junk food" and chips are a major no-no. But my mom convinced me to get them and I'm so glad she did!!! They were fantastic and only 110 calories for 23 chips. Plus the sodium isn't too bad either.
Dinner was thrown together at last minute. I was hungry but had no idea what to make so I just made another Bulgar Pilaf. This one included 1/4 cup (dry) bulgar, a handful baby spinach, 2 tbsp hot salsa, 1/2 tbsp BBQ sauce, 1/4 cup kidney beans, and 1/2 cup broccoli-roasted. I felt so guilty after eating this but I know I need to keep eating...while this was cooking I had 1/2 cup PB Puffins as well, I just couldn't resist.Here's the snack I just finished off...1 roasted apple, 2 tbsp Better n' PB, and 1/8 cup Hemp Plus Granola. Mmm, love this combination.

I'm thinking of a movie tonight...I just don't want to go by myself. It's too late to make plans but I kind of like the idea of going alone. I feel like I need time to myself but I'm nervous to be seen alone. Have any of you ever gone to a movie alone? What was it like?

Be Mine?

Happy Valentine's Day!
I'm not a big fan of Valentine's Day, in fact I don't even really celebrate it. The only thing I do is draw hearts (I pretty much draw hearts everyday though as that's my 'signature' symbol) and eat chocolate. I show my love everyday so there's no need for a holiday!
I wanted to start my day off right...with chocolate! I made a bowl of Chocolate Covered Strawberry Oat Bran for an extra decadent breakfast. I used 1/2 cup oat bran, 1 1/4 cups water, cinnamon, 1/2 cup frozen strawberries, 1 pkg stevia, 1 tbsp dark cocoa powder, sliced strawberries, and 1 tbsp Dark Chocolate Dreams PB. This is the first time in a while that I've cooked oat bran on the stove and it's so much better than overnight-which I prefer to make with all rolled oats or half rolled oats, half oat bran. It just plumps up so much more on the stove. I was perfectly satisfied after this bowl and ready for the day.
I was still full from my oat bran so I just had a pear for my mid-morning snack. I might have has 2 squares of dark chocolate too ;)
This lunch was full of fantastic flavor and I didn't want it to end! I wanted a quick sandwich but a filling lunch so I made a simple Bean Burger. I used the recipe from Kath's Blog but used kidney beans because I didn't have black and I cut the recipe in half to just make one serving. I set it on a slice of ezekiel bread spread with BBQ sauce and topped with lettuce. On top is a ketchup heart. Here's where the special part comes in...I topped it with another slice of ezekiel and a slice of vegan Cheddar Rice Cheese! My mom had bought these for my little brothers but they are so picky and didn't like them. I've never had vegan cheese before because I could never find it...then my eating disorder came along and it became a HUGE fear food. I'm proud to say I've conquered this fear and that I felt good doing it. It's pretty low fat anyway so I don't know what I was worried about...plus it tastes so good! I also had a carrot and another pear (not pictured).

After lunch I went to the little health food store near my house for hummus, and a couple other things. Then I went to the gym for 35 minutes on the treadmill and some weight lifting.
Post-Gym Snack: PB Puffins! What better way to celebrate a day of love with the food I love?! A large 2 cup serving had me swooning and full until dinner.
I had to make a quick dinner as I was leaving to go somewhere right after. I made a Bulgar Pilaf with 1/4 cup (dry) bulgar, 2 tbsp marinara, 1/2 cup mixed veggies, 1 tbsp sun dried tomatoes, and 2 tbsp hummus. The addition of hummus makes this dish so creamy and rich, I've made it before and it's still one of my very favorite dinners.

Trader Joe's was the destination of choice tonight. I needed to get some organic produce and Better n' PB! I bought 2 jars this time because the serving size so does not match the amount in the jar. I also bought a little treat which I have always denied myself or rather ED has not let me have. I might have it tomorrow but we'll just have to see, dessert is up first!
When I got home from TJ's, it was time for my night snack so I broke out the Better n' PB and got myself to work on this scrumptious dessert. On my last leftover Stovetop Biscuit I spread 2 tbsp Better n' PB (I'm seriously in love with this stuff, the flavor really grew on me!), 6 thawed strawberries, and 1/2 tbsp Ricemellow Creme. Strawberry Shortcake to the extreme!!! I also had another 2 squares of dark chocolate just so I made sure I got enough chocolate in today.

I'm really proud of myself today...between the dark chocolate, rice cheese, and higher-calorie night time snack, I feel like I really put ED in his place. I'm beginning to see how happy I can be without him, without worries, and without the paranoid thoughts. I've been thinking about sharing a little more about me in upcoming posts. What I like, dislikes, favorite memories, new hobbies, old favorites, just a little bit more about who I am because I'm really trying to find that right now. What would you like to see more of? Suggestions are very welcome.

We've Reached the End

Hey Loves!
Today was hard, I hate missing school. I have boatload of homework to accomplish over the weekend. My head is still stuffed up but it's getting better and my eyes don't make me look like I'm crying anymore haha. I'm so glad it's Friday though, and I don't have school Monday! YES!
Oh. My. Gosh. I had a bowl full of heaven this morning. I know I say that a lot but I'm still riding high. White Chocolate Pear Oats was my combination this morning and I used 1/2 cup oat bran, 1/2 cup almond milk, 1/2 cup water, cinnamon, allspice, nutmeg, cloves, pinch of salt, 1 diced pear, 1 tbsp Hemp Plus Granola and 1 tbsp White Chocolate PB. If you haven't tried oat bran, you must! It's so creamy and even healthier than rolled oats!
One of my favorite bars- a Chocolate Brownie Purebar. I swear this is EXACTLY like a homemade walnut brownie. Fabulous!
Isn't this dish gorgeous?! It's a Wheatberry Waldorf Salad based on the recipe in Skinny Bitch in the Kitch. I used 1/4 cup (dry) wheatberries, 1/2 stalk celery, 1/2 small green apple, 1/8 cup cranberries, 1 tbsp fat free vegan mayo, 1/2 tbsp rice vinegar, 1 tbsp chopped shallots, fresh parsley, and black pepper.
With the salad, I had a Stovetop Biscuit and a carrot. The salad was great! But then again, I love anything with wheatberries in it. They give such a great chew and with the tangy, sweet, and tart.
After lunch I treated myself to 2 squares of pomegranate dark chocolate. I love chocolate but I noticed it leave this odd feeling in my throat. Like I can't swallow. It's only when I eat straight up chocolate so I don't know what the deal is...have any of you ever had this problem?
After-gym snack: 2 Wheetabix Biscuits, 1 WholeSoy & Co yogurt, sliced strawberries. Perfect after my hard workout. Working out always makes me feel so much better. I've been so stuffed up the past few days and doing a little cardio always clears my head. Today I did 45 minutes walking on the treadmill and some lifting on most of the machines.
I was craving tofu all day today so for dinner I made some Miss Gliding Calm tofu. I kept the rest of the meal simple with carrot sticks, red bell pepper, broccoli, and 2 slices ezekiel bread. I just can't get enough fresh veggies lately and the tofu was exceptionally delicious.
I just finished this bowl off...it's 1 cup Puffed Millet, 1/2 scoop soy chocolate protein powder (Whole Foods brand), and 2 tbsp Better n' PB. The only problem I have with this PB...it doesn't last long enough!!! It was the last of the jar tonight and I'm sad =( I guess I'll have to think up some new snacks until I get some more. This stuff has really grown on me, I love it!

Tomorrow I'm planning on doing a little grocery shopping, maybe going to see a movie, and just catching up on some ZZZZZ's. I hope you all have a relaxing weekend!

Feeling Blah

I ended up staying home again from school today, I felt like my face was leaking. Runny nose, watery eyes, sorry for the grossness but it has been horrible all day. I'm going to school tomorrow unfortunately so I can catch up over the weekend.
I wanted a break from my oatmeal (what?!) so I made this Wheat Berry Breakfast Bowl from 101 Cookbooks. I quartered the recipe, omitted the oil, butter, nuts, and dried fruit, used blueberries instead of cranberries, and added 1 tbsp Vanilla Almond Butter. Mmm, this was so creamy, nutty, fruity, and just delicious for breakfast. I would definentely make this again. I was so excited to dig into my new stash of WholeSoy&Co yogurt, I love this brand.


A little while later, I did some yoga. I tried a new video that I got from Netflix and I loved it! I always have to make sure I like the instructor first because some people bug me, but this one was great.

With all this beautiful weather (it's not as warm as before but the snow is gone so I'm not complaining) I've been craving light, vegetable-packed meals. Today I had a Sun-dried Tomato and Hummus Sandwich. I used 1 leftover biscuit, 1 tbsp hummus (the last of it!!!) 2 tbsp sun-dried tomatoes, lettuce, with carrots and broccoli on the side. Plus an apple afterwards. So fresh, flavorful, and healthy.I also had 2 squares of this! The Peppermint Ritter Sport bar I won from Ricki's contest. I recieved it this morning and even though it was a little banged up, I LOVED it! I haven't had the mint-chocolate combination in a really long time and wow it was good. So refreshing and a great treat after lunch.
When I got back from the gym I had this Tropical Yogurt Bowl. I used the leftover yogurt from this morning (about 1/2 cup), a serving of Kashi Island Vanilla cereal, and 1 kiwi. Mmm, the sweet and tangy combination was so delicious. I ate it while reading Soups and Hearty Stews for all Seasons by Nava Atlas. I just got this from the library and I've seen some pretty tasty looking recipes so far and I can't wait to try this out.
I was craving some MORE veggies for dinner so I made a Tofu Scramble with 2 slices ezekiel toast. The tofu scramble was made with broccoli, carrots, red onion, mushrooms, garlic, 1/3 block lite silken tofu, 2 tbsp nooch, and spices. Breakfast for dinner...can it get any better?!

Right now I'm enjoying my late night snack (same as yesterday) and watching Reba. Oh and about the Millet Puffs...they taste kinda like styrofoam, but in a good way. I don't know how to explain it, they are just good, you just have to mix it up with other things. I hope I get better before school tomorrow, wish me luck. 'Night.

Stuffed

I didn't end up going to school today, I woke up with a stuffy nose, clogged throat, and a fuzzy feeling in my head. The weather has been up and down lately so my hay fever is acting up. I'm still not sure about tomorrow but I'm going to try and go so I don't miss too much.
I've been reading up on the benefits of oat bran lately so I decided to make some thing morning...only not in the usual way. I made Blueberry Oat Bran Pancakes with 1 tbsp Dark Chocolate Dreams PB. On the side is a sliced pear and I also had a slice of ezekiel bread. The pancakes were so easy to make. I combined 1/2 cup oatbran, 1/2 cup blueberries, and 3/4 cup almond milk in a rectangular container. Then in the morning I cut it into 2 pieces and fried them in a non-stick skillet. They fell apart a little but still very delicious and nutritious.
Mmm, a thinkFruit Cashew Acai Protect bar was my snack this morning. Pretty good but nothing special.
A simple lunch was on the menu today. I made Stovetop Biscuits (you must make these now!!!), spread with hummus, and topped with spinach and tofu (sauteed in soy sauce and spices). On the side are some baby carrots and an apple that I ate afterwards. The biscuits were so amazing, soft and crumbly on the inside, firm and crunchy on the outside. I also had another slice of ezekiel bread...which I feel guilty about. I was still hungry but I feel like I should have stopped eating after my apple.


Today was boring because I was not feeling too great but I did get some yoga in! I haven't done yoga in a long time. I always feel so busy but I'm really glad I fit it in today because I felt so much better when I was done. Not pictured is my afternoon snack of PB Puffins. 2 cups but this time I didn't feel sick, maybe it was just yesterday.
PB Puffins always leave me full for hours, I wasn't even that hungry for dinner. But I was craving a bunch of raw veggies. I made myself a nicely sized salad out of lettuce, baby spinach, 1 tiny green apple, 1/3 cup blueberries, 1 carrot, 1/4 red bell pepper, and a dijon-mayo dressing.

*EDIT TO ADD: I just made my snack and now I'm enjoying every single bite of it...
I mixed 1 1/4 cups Millet Puffs, 1/2 scoop chocolate protein powder, 1/3 cup almond milk, and 2 tbsp Better n' PB. This combo is insane, love it!! I also had 2 squares of dark chocolate for the heck of it. Suck on that, ed!


I hope everyone's week is going well so far. My head feels so stuffed so I'm going to go try and unclog my face haha. Hopefully this goes away soon.

Who Wears Short-Shorts?

It's only Tuesday and I'm already tired! I might be taking a day off tomorrow but I'm not sure...my hay fever has been acting up after this warm 65* day. We'll see tomorrow. I actually got to wear SHORTS today when I went to the gym, so exciting.
Pumpkin Oats were on the menu for today's breakfast. I used 1/2 cup oats, 1/2 cup almond milk, cinnamon, nutmeg, allspice, cloves, 1/2 cup pumpkin, 1/4 cup Hemp Granola, and 1 tbsp White Chocolate PB. I also had a red pear on the side.
Mid-Morning snack: Apple Cinnamon Clif Nectar bar. It was pretty good. Chunkier than a Lara but the taste was similar to the Apple Pie. I thought it was a little too sweet though, or maybe that's just me.
I was craving something light for lunch today because of the weather. I made an Amy (hummus and spinach) sandwich with a peeled carrot and an apple. This was so good, I love this sandwich! I would eat it everyday if I could. I also had a slice of Chocolate Pumpkin loaf and...
2 squares of this Dark Chocolate Pomegranate bar. Love it!
After running an errand for my mom and working out at the gym I came home eager for a snack. I had 2 cups PB Puffins with Almond Milk. So good but afterwards I had a stomach ache. I've been getting them after I eat these the last couple times I've eaten them. Maybe I'm just having too big a serving? It never bothered me before... :/
No picture of dinner but you've seen it before (just a hummus pilaf). For dessert I had another slice of Chocolate Pumpkin Loaf with 2 tbsp Better n' PB. I had to eat it with a spoon! Please excuse the lighting on this picture...it's so dark outside. I also just finished an apple.

I'll keep you updated on the therapist/dietitian situation but I have to wait for a phone call back. I'm going to go finish some homework and get a couple other things done.

More Chocolate!

You can't go wrong with that right?! It was a lovely 55* outside again today and it put me in such a good mood. I did have something bad (ish) happen but more on that later.
Isn't this such a pretty bowl? I love the sunny color. I had Orange-sicle Oatmeal this morning using 1/2 cup oats, 1/2 cup almond milk, 1 tsp vanilla, cinnamon, 1 orange, 1 tbsp Wheat Germ, and 1 tbsp Vanilla Almond Butter. Mmm, I love the citrus/nut butter combo! A pear on the side completed the meal.
Normally, I'm not a big fan of Luna Bars. They just have this certain taste I don't like...but when I saw White Chocolate Macadamia Nut come out, I knew I had to try it. I'm so glad Caroline sent me this flavor in our bar swap because it was phenomenal! Just like everyone said, like a rice crispy treat. Thanks again for the bars hun!
You know how I love dipping ezekiel bread in soup? Well, when I found this recipe for Bread Soup I knew it would have to be made soon. Well, today I made it and wow. I burned the crap out of my mouth though haha. I made some substitutions, using what I had on hand and cut the recipe in half to make one serving. I used water instead of oil, 2 baby onions, added a carrot, water instead of stock, 2 slices ezekiel bread, 1/3 cup marinara sauce instead of tomatoes, and a couple handfuls of baby spinach. The bread became so soggy and soaked up all the flavors of the soup and the veggies and spices tasted awesome together. Plus it only took 20 minutes to make. I also had a slice of Chocolate Pumpkin Loaf for dessert.

I was planning on waiting until Valentine's Day to reveal and open this but I just couldn't. I was so excited to receive my Secret Cupid gift!
The mystery cupid turned out to be Danielle from A Year of Healthy Eating. I have never been to her blog before but I've been reading and I love it! But on to the awesome gifts...
On an adorable plate and bowl set I received a Dark Chocolate Pomegranate Bar, Lemon Larabar, Apple Cinnamon Crunch ProBar, Apricot Coconut thinkOrganic bar, Gingersnap Larabar, Cinnamon Roll Larabar, and an adorable pair of Valentine's Day socks. Danielle I am so grateful for your gifts. You are so sweet and I can't thank you enough!
Honestly...I was planning on eating some later but right when I saw it I had to try it. I haven't had pure chocolate in months! A fear food that I can proudly say I'm not fearing anymore! I had 1 1/2 squares after lunch and let me tell you...MMM!!! So good =)
Don't worry I had an afternoon snack-PB Puffins-but I figured you've seen them before so I didn't take a picture. I was craving some raw veggies for dinner so I made myself a Huge Salad! In it was romaine lettuce, baby spinach, carrots, red bell pepper, 1 pkg. edamame, 1 apple, and a Mayo-Dijon dressing. It was so delicious, I can't wait until summer when I can make salads everyday. They make me feel so amazing when I eat them but in the winter it's too cold to eat raw veggies. Today was warmer so I really enjoyed this.
This was my dessert last night and tonight's was similar as well. Last night I had a slice of Chocolate Pumpkin Loaf, 1 tiny apple, and 2 tbsp Better n' PB. So. Freakin. Good. Go make this bread now. Tonight's snack was just a slice of the loaf with 2 tbsp on top. It was so moist and gooey I had to eat it with a spoon! YUM!

My mom received a call back from my therapist today...it didn't go so well. My mom and I have been discussing treatment options and we've decided on every 2 weeks I will meet with both my therapist and dietitian. It 's just SO expensive and we can't afford it. I specifically wanted my mom to call so it wouldn't sound like I wasn't trying, but she took it that way anyway. My therapist thought I was backing away and that she thinks I should see them both TWICE a week. I have no idea why...I eat and I'm achieving a lot on my own. When the nutritionist asked me if I was eating reduced fat PB (this was before I bought the Better n' PB) I was like okay no I didn't say that. Then she said if my therapist helped me with that and that hurt because I did that by myself. It's like she doesn't even think I can do it. There is also an experienced vegetarian dietitian at the center but my therapist doesn't want me to go to her for some reason. I have now idea what will happen with this but I will keep you updated on everything.

Now I'm going to get ready for bed and watch Chelsea Lately! No new Gossip Girl tonight! BOO!

Chocolate for Breakfast

Ahh, Sunday morning. Too bad Monday is the day that follows it.
I was craving some veggies this morning so I made a Tofu Scramble. 1/4 cup each carrots, broccoli, mushrooms, red bell pepper, 1 tsp garlic, 1/3 block lite silken tofu, 2 tbsp nooch (nutritional yeast). On the side I had some Toast w/ 1/2 tbsp each White and Dark Chocolate PB, a pear, and some Green Tea. This was one of the best breakfasts I've had in a long time and I thoroughly enjoyed the sweet and savory flavors.
I wasn't too hungry for a snack but I had one anyway. Pictured is a single serving Cinnamon Applesauce and some Kashi Island Vanilla cereal. I actually had a whole serving of the cereal but it didn't fit into the applesauce container =P
I wanted some more veggies for lunch but I knew I needed some protein and something a little more filling. I decided on Lemon Tofu from Vegan Dad. It turned out great and tasted so clean and simple.
On the side I had steamed Broccoli and chopped Carrots. I also added a tbsp of hummus to dip.
Heaven. That's where I was after eating this. It's the Chocolate Pumpkin Loaf from Tina's blog. I made some changes...1/2 cup GF AP Flour (I ran out after this) and 3/4 cup WWPF, only 1/2 cup turbinado sugar, 1/2 cup applesauce instead of egg whites, and omitted the chocolate chips. I can't even tell you how good this was, you are just going to have to make this yourself. HOLY YUM!
Isn't that pink color so pretty? It's Strawberry Yogurt made with CCV's recipe. It turned out great and it was so thick and creamy! I added another serving of Kashi Island Vanilla cereal and mixed it all together to make a fabulous afternoon snack. After I ate I pre-portioned out the cereal into little baggies so I could control myself around it! I swear I could eat the whole box in one sitting.
I was at a loss on what to make for dinner. I just decided to throw a bunch of things I was craving together and made one AMAZING combination. In this Bulgar Pilaf, I used 1/4 cup bulgar (dry), 2 tbsp hot salsa, 2 tbsp marinara, 3/4 cup baby spinach, a handful sun-dried tomatoes, and 1 tbsp hummus. Uhh, my gosh! I stirred the hummus into the whole thing and wow, it got so creamy and thick...try this out! All the flavors were so bold and savory, a repeat dinner for sure.


Right now I have to go finish my laundry, have a snack, and watch the Grammy's! I love watching award shows, the pre-shows are my favorite because then I can see all the fashion. Love it! Have a nice night. =)

Dance, Dance

I hate to do this...but I'm totally on someone else's internet right now. I cannot for the life of me connect to my family's computer and I can only upload pictures to my laptop. I really need a new computer.
In other news, it was a beautiful 55* today! You can bet I spent some time outside enjoying wearing no coat! I got to roll my windows down while driving and everything. How exciting! I can truly say I was in such a great mood today and I haven't felt this good in a long time.

Saturday mornings are usually very leisurely and today was no different. I always make the things I don't have time for on the weekend so today I picked the Noggy Blueberry Bread Pudding from Krista's Kravings. I used 2 slices Sesame Ezekiel (more on this later), flax instead of eggs, and plain ricemilk instead of soynog. While this was cooking, I munched on a teeny pear and sipped some green tea. I smelled so good coming out of the oven! So cinnamon-y and fruity. I really enjoyed this and it was the perfect decadent yet healthy Saturday morning breakfast. After this I had 1 tbsp Dark Chocolate Dreams PB straight up on a spoon! Yum.

No morning snack today, I ate breakfast later than usual and I just wasn't hungry. I did have 2 dried apricots but nothing worth a picture. After I got ready for the day I started on lunch. I made Gliding Calm Tofu for the first time! I used TJ's brand Tofu San cut really thin and used her marinade (minus the oil) to coat my tofu. I baked it for 30 minutes and out came some super crispy tofu! It was almost like tofu-chips and trust me, they were tasty. Love the marinade, I will be using it more often. I also had 2 carrots-chopped, 3/4 cup steamed broccoli, and a tiny apple (not pictured, why are all my fruit so small haha). Lunch was delicious, but very light. I decided to bake up a Pumpkin Cookie for One inspired by Laci! I followed her recipe but of course made a couple changes... I used GF AP flour instead of WWPF, 1/2 pkg. stevia instead of sugar, and didn't add chocolate chips. It made a HUGE cookie! It turned out really soft and moist on the inside so next time I think I will make two smaller cookies or just bake it longer. The flavor was very very good though and it was the perfect sweet treat after lunch. When I finished lunch I decided to go to Target to pick up a couple of things. When I got home it was snack time so I enjoyed this hearty bowl of PB Puffins while reviewing some of my recent purchases...Yoga Journal, Shape Magazine, a new recycled binder for school, and an adorable new journal. I've always wanted to start writing again so I thought a new one might help me get started. After my snack I cranked up the music in my kitchen (my family was at the Field Museum in Chicago so I was alone) and danced with a passion! I haven't danced like that in a long time. I've always just done it to lose weight and burn calories but I really enjoyed myself today and felt like I was just having fun. I guess all that dancing stole my appetite because I wasn't hungry for dinner at all! I made myself eat anyway and as soon as I started eating, it was as if I was starving! On 2 slices of Sesame Ezekiel bread I spread 2 tbsp Oasis Roasted Garlic Hummus and added 3/4 cup baby spinach. On the side I had Edamame (overcooked in the microwave, but I like em crunchy!). Mmm, this was amazing. When I went to TJ's the other day the only plain ezekiel I could find was the sesame kind. I was always hesitant to get it because I thought it would be higher calorie or fat but when I looked it was identical to regular. I'm so glad I bought this though! Lately I've been noticing that my ezekiel bread is sliced very thin and either is too soft or too hard. It also has big holes in it and tears very easily. The sesame kind was perfectly sliced and was soft just like regular wheat bread. This made the sandwich and I might just buy that kind from now on! The hummus was also a new find-on sale $1.99 at the health food store! I picked it up because of it's low fat content but when I got home it tasted like the other higher fat brands. Very smooth, thick, and creamy...a major improvement over the last kind I tried.


Since my computer is acting up I didn't get to photograph my snack. I just finished a plate of Better n' PB (2 tbsp) with a sliced Apple. I have missed this classic combo which I used to eat all the time when I first became vegan (with full-fat PB of course). Now I'm just ready to relax and paint my nails! Have a great night babes!

It's Friday!

Thank goodness! Some time to relax!
Breakfast was another bowl of oatmeal, this time Pumpkin Oats. I used 1/2 cup oats, 1/2 cup ricemilk, cinnamon, cloves, allspice, nutmeg, pinch of salt, 1/4 cup pumpkin, 1/2 cup Nature's Path Hemp Granola, and 1 tbsp White Chocolate Wonderful PB. I love the white chocolate + pumpkin combination and the granola (which is quickly becoming my favorite) is the perfect crunchy topping.I was still a little hungry so I had a teeny tiny pear. Can't get through the morning without some fruit!
My Mid-Morning snack was brought to me by the amazing Caroline. I tried the Goldenberry Goji Shakti bar today and since I've had both goldenberries and goji's plain, I was excited to eat them together in a bar. The verdict? Pretty damn good. Very tangy, tart, and sweet all at the same time. It was also very moist and soft. Deelicious!
I had absolutely no idea what I was making for lunch today. I got home and we had no fresh produce! I threw this Vegetable Polenta Marinara together last minute and it was super easy. I just used 1/2 pkg. of polenta (cut into fries and sauteed until golden), 1/3 cup marinara sauce, 1/2 cup frozen mixed veggies (heated with sauce in microwave), 1/4 cup chickpeas, and sprinkled with vegan parm. This turned out really good! I used to make polenta marinara all the time so my tastebuds were happy to taste this meal again.


After my lunch I went to my therapist. It went very well and I got to discuss my concerns with the dietitian. She understood and my mom is calling tomorrow to see if I can be assigned a different one. We are also going to change therapy and meetings with my dietitian to once every two weeks. It's just too expensive to go every week and I don't think I need it that often. When I got back from the therapist I had a snack of 2 Wheetabix Biscuits, 1/3 cup Puffed Millet, 1/2 cup ricemilk, and 1 tsp dark chocolate dreams PB. Then I went to Trader Joe's! They don't have a huge produce selection but enough to last me at least a couple days. I'm planning on a Target run tomorrow so I will get more there. When I got home it was already dinner time so upon walking in the door I had a slice of ezekiel bread (oh how I've missed thee!). Then I made myself a salad (the same as yesterday) and after that had another slice of ezekiel spread with this...

Better n' PB! I found it at TJ's and couldn't wait to try it! I've seen it on Erin's blog and she raved about it so I had to see what all the fuss was about. It was pretty good! It will take a little getting used to but it's not unbearable. I really liked it on my ezekiel. This product will in NO WAY replace my regular nut butters. I will still be eating those on a regular basis. I was merely just curious about it and wanted to try it. I think it will be good for nighttime too. I still have a set limit on fats that I'm working on and I think this will help me accept PB at night. Right now it's only a morning thing so I'm hoping that once I get comfortable with this, I will be fine with regular PB.

Tomorrow is Saturday! Which means I have more time to cook...hmm, what will I come up with tomorrow ;) You will have to wait and see!

A Package?!

Sorry for the super-late post! I've just been so busy today. I'm going to try and keep this short (haha yeah right) and sweet so I can get ready for bed.
Breakfast: Double Chocolate Pearberry Oats. 1/2 cup oats, 1/2 cup ricemilk, cinnamon, allspice, pinch of salt, 1/3 cup blackberries, 1 pkg. stevia, 1/4 cup Nature's Path Hemp Plus Granola, 1/2 tbsp White Chocolate Wonderful and Dark Chocolate Dreams PB. I can't even think of the words to describe how yum this was...just trust me.
Mid-Morning Snack: thinkFruit Apple Noni Nourish. Another winner from the think company! It tasted like an Apple Pie Larabar, so delicious.
Lunch: Hummus Stew. Yeah, it tastes as good as it sounds. I made a lot of changes to this recipe because I wanted a stew instead of soup (too much liquid) so here is how I did it...
Hummus Stew:
Serves 1 large portion
1 small shallot, diced
1 small carrot, diced
1/2 red bell pepper, chopped finely
6 cloves garlic
1/2 tsp basil
1/2 tsp chili powder
3 dashes nutmeg
pinch red pepper flakes
1 cup frozen vegetables ( I used a mix of carrots, corn, green beans, and peas)
1/4 cup hummus
1/4 cup sun-dried tomatoes
1 cup water
1/4 cup bulgar
2 tbsp Nutritional Yeast (nooch)
salt/pepper to taste
In a medium saucepan over med-high heat, saute the shallot, carrot, bell pepper, garlic, basil, chili powder, nutmeg, and red pepper flakes for about 8 minutes. Then add vegetables, hummus, tomatoes, water, nooch, and bulgar. Mix well and bring to a boil. When it reaches a boil, lower heat to low and simmer 12-15 minutes until the bulgar is done. Season with salt and pepper and enjoy =)

After-gym snack was Cereal of course. 2 Wheetabix Biscuits, 1/2 cup Puffed Millet, 1 kiwi, 1/2 cup ricemilk, all heated in the microwave. I also had a pear afterwards. At 4:15pm I had my first appointment with my nutritionist. She was nice but she didn't really know anything about veganism. Not even a little. She also didn't look at my blood work so she just assumed I was deficient in nutrients. My blood tests were fine thank you very much. I hate that she just thought she knew me before I walked in the door, like I'm like every other girl with an eating disorder. That is so not true. Everyone has different needs they need to address and it was like she put me in a certain category. I'm going to my therapist tomorrow so I will ask her if there is anyone else I can see. I just didn't click with her.
I got home and it was 6pm. I was nervous because I usually eat dinner at 5pm with a snack 2 hours later. For dinner I had a Salad with mixed baby greens, baby carrots, chickpeas, and a Dijon Mayo dressing I whipped up in 2 seconds. Very filling and just what I was craving. I haven't had a cold salad in a while and let me tell you, my body LOVED it! Instead of having my snack later I just ate it with dinner, it was the same thing as last night by the way so no picture. I was too occupied opening this...
A beautifully decorated goodie box from darling Caroline! We did a little bar swap and I was so happy to see this when I got home! When I first opened it I saw a cute little Valentine's tissues (how did you know I needed some?! haha) and a card with a great quote on it. I hung it up in my room to give me inspiration.
Then underneath was a small nest of exciting new bars!
Sweet, Sweet Caroline sent me a Cinnamon Apple Clif Nectar bar (I got her the same one! Crazy.), a Peanut Goji Glow thinkFruit bar, a Chocolate Chip Trail Mix Purebar, a White Chocolate Macadamia Nut Luna bar, and a Goldenberry Goju Shakti bar. I'm so excited to try these out, I wanted to take a bite of each of them! Thank you sweetie!!!
Oh and here is the exciting new book I got yesterday in the mail. Vegan Bites by Beverly Lynn Bennett. It's a cookbook with super easy recipes for 1-2 people. It's always to hard to quarter and half recipes all the time (although I have gotten really good at math) so I can't wait to try some recipes out. I've already bookmarked a couple so look out!

2nd Breakfast

I've got to keep this post short, math homework is calling!
Breakfast: Pear Vanilla Spice Oats. 1/2 cup oat bran, 1/2 cup ricemilk, cinnamon, allspice, nutmeg, cloves, 2 tsp vanilla, 1 diced pear, 1 tbsp Vanilla Almond Butter. I was in heaven eating this! So creamy, luscious, and flavorful. I'm getting hungry just thinking about it!
Mid-Morning Snack: Cashew Pecan thinkOrganic bar. LOVED it! I thought it would be a little crunchier but it was actually really smooth and creamy.
I had no idea what to make for lunch so I just thought I would have breakfast again. =) I made a Tofu Scramble (carrots, mushrooms, tomatoes, red bell pepper, mixed baby greens, 1/4 cup chickpeas, 1/8 block lite tofu, 2 tbsp nooch, italian style spices, vegan parm) and had 2 low-fat Van's waffles on the side. Not pictured is the two kiwis I had afterwards. Delicious.
Post-gym fuel: Cereal! 2 Wheetabix Biscuits, 1/4 cup ricemilk, 1/3 cup blackberries.

Dinner was just some leftover Moroccan Lentil soup and an apple-too boring to photograph.
Here is the late-night snack I'm about to enjoy ( 1 scoop Choc. Protein Powder, 1 cup water, 1/3 cup frozen peaches, 1 cup Millet Puffs)...along with my new book!!! I want to thank Amy and Brooke for the inspiration to get this book and I can't wait to start reading it. I got another package in the mail today with yet another book...but you will have to wait to see that ;)

Gotta go eat my snack and finish homework, have a good night lovies!

Another Goal Reached

Told you this combo would be back! I had another bowl of Brappleberry Oats this morning. Using 1/4 cup oats, 1/4 cup oat bran, 1/2 cup ricemilk, 1/2 cup blackberries, 1 apple, 1 tbsp wheat germ, and 1 tbsp White Chocolate Wonderful PB. It tastes great but I think the real reason I made it again was because of the color! So pretty!
Mid-Morning snack was this thinkOrganic Cherry Nut bar. It was firm like a Larabar, sweet like a Purebar, but completely different from both. It wasn't too sweet like a Purebar but it wan't too tart like a Larabar, just different. I liked it a lot and was the first bar I've had with actual big walnut chunks in it. Usually they're hidden!
School went pretty good today. I'm not enjoying it but I didn't hate my day today. The only thing I'm dreading is prom! I don't think I'm going and it's kind of disappointing. But anyways, lunch! Not to brag or anything but this lunch was one of the best I've made in a while. It consisted of 1/2 bag of Kashi Pilaf (1 serving), 1/2 medium sweet potato (roasted), 10 brussels sprouts (cooked this way, which is the BEST way), and 2 tbsp Annie's BBQ sauce. Chewy, crunchy, tangy, sweet, all the flavors were SO good together. Afterwards I had an apple which probably would have been delicious if diced and added to the meal. Yummy.
After lunch I went to the gym and got a nice 45 minute walk/jog done on the treadmill. My body was craving a good jog, my legs were just aching to move! When I got home I re-fueled with some cereal. I used 1/2 cup Nature's Path Red Berry Crunch and 2 Wheetabix Biscuits with 1/2 cup ricemilk. Heated up in the microwave, it all melded together and created this amazing flavor combination. It was the very last of my Red Berry Crunch so I will have to search for some more!!!
When I returned from the post office (hmm what could I be sending? ;)) I made this simple, quick dinner. Leftover Chinese Dumplings, 3/4 cup spinach, and 9 baby carrots (some of which jumped off the plate and into my mouth before the picture was taken). This has left me quite full (probably all the spinach) and now I'm just digesting and getting ready to do homework, have a late night snack, shower, and watch Chelsea Lately. Excited news about that: Chelsea Lately is moving a half hour earlier! I don't have to stay up until 11pm now! WOO! haha.

Also in exciting news: I have added nighttime snack to my new accomplishments! The past 2 nights I've been having a nighttime snack and I feel SO good about it. On Sunday night I had a slice of ezekiel bread with fig spread and an apple, and yesterday night I had a Chocolate-Strawberry Smoothie. It helps me to focus on my schoolwork and when I wake up I'm not thinking about food so much or having stomach pains from being so hungry. Thanks you all for your loving words and kind advice. You are mean so much to me and are so inspiring.

I'm not feeling that much better than yesterday but you all have really helped cheer me up and I'm just trying to keep my mind off the situation for now. I received a package in the mail today and I will show you what I got tomorrow! Have a good night babes.

Emotional

This is going to be a quick post because I'm not feeling too well. I'm not sick or anything but it's been a crazy day and I'm so emotionally drained right now.
Breakfast was Blappleberry Oats (oh these names are so fun to come up with!). I used 1/2 cup oats, 1/2 cup ricemilk, cinnamon, allspice, 1/3 cup frozen blackberries, 1 chopped apple, 1 tbsp wheat germ and 1 tbsp White Chocolate Wonderful PB. Fabulous combo if I do say so myself, you might be seeing this more often!
Mid-Morning Snack was an Apple Cinnamon Yotta bar. Might as well be called a Yucka Bar! It was pretty gross. Not unbearable but really dry and you could for sure taste the vegetables. I love me some veggies but not in chunks in a sweet snack bar!
Since it was a late start day, I get out at 12:30 so I always need fast lunches to satisfy my hunger. Today I just heated up a serving of Moroccan Lentil Soup and had 2 slices of ezekiel on the side for dipping of course. So flavorful and comforting. It's finally warming up here too! I'm hoping for an early spring, groundhog-shmoundhog! =P

Later eats consisted of PB Puffins, an Amy Sammich, and an apple. Nothing too exciting. Again sorry to keep it so short but I'm going to go watch Gossip Girl...hopefully that will make me happy after this horrendous day.

Happy February!!!

Are you ready for an extremely long post?! Let's start with yesterday's eats...
I wanted to make a PB&J Sammich for breakfast but I didn't want to go the old route...so this time I used 1 tbsp Vanilla Almond Butter, 1 tbsp Tofutti Cream Cheese, and sliced Strawberries. On the side is a Braeburn apple. The sandwich combo was amazing! I highly suggest this!
I didn't have any bars left in my cabinet so I had 1 cup Power Hungry Granola with 1/4 cup ricemilk.
I was craving soup for lunch and something spicy so I made HH's Moroccan Lentil Soup. Oh. My. Gosh. This soup was so delicious! It came together so quickly and I really enjoyed each flavorful bite. Leftovers will be even better!
My mom used to buy this stuff all the time but it's so expensive (12.99 per bottle) but she found some on sale and I was so excited to used it again! I decided to incorporate it into my snack...
My afternoon snack consisted of 1 WholeSoy&Co Yogurt, 1/2 cup Hemp Plus Granola, and 1 tsp Maple Sugar. Mmm, this is one of my favorite granolas and the hint of maple made it even better. Yum, Yum.


I'm drawing a blank on what I had for dinner last night...oh wait, more SweetP fries! =) I also had the last of my Power Hungry Granola (man I love that stuff, it's so cinnamon-y).
Here's today's food:

I was so excited to make this breakfast, Stuffed French Toast!!! I toasted 2 slices of ezekiel bread, slathered them with 1 tbsp Almond Butter, and added some sliced strawberries. I put the slices together to make a sandwich and dipped the whole thing in a batter based off of VwaV's recipe. I fried it until browned in a non-stick skillet and topped it with more strawberries and 1 tsp agave nectar. So DELICIOUS! I can't imagine making french toast any other way now, it was so good!
My mid-morning snack was an Apple and one Wheetabix Biscuit (not pictured).
I wasn't going to make this recipe since I thought it might be hard but it actually turned out really well. I made Vegan Dad's Chinese Dumplings with steamed spinach (underneath) and roasted broccoli and baby carrots. Oh so good =)
Afternoon snack = 2 cups PB Puffins with 1/3 cup ricemilk. I heated it up in the microwaver and devoured err... slowly savored these little puffs of heaven.
I was still a little hungry so I also had the LAST of my Vanilla Almond Butter!!! Good thing I already ordered more. I think it was about 1.5 tbsp left or less, but who knows because I didn't measure! I just ate it right out of the jar. Not only that but this is the first nut butter jar that I have finished all by myself...ever! Plus it's the first one I bought since I started recovery. Yes today was a day of accomplishments and I owe you all a big thank you because you all give me the strength to get better.


An hour later I went to the gym and did 15 min ellipical and 20 minutes treadmill. I also did some leg work.
When I got home I started on dinner right away and about a half hour later it was done. Tonight I had 1/2 large SweetP (in fry form of course with ketchup), red cipollini onions-roasted, and 1 1/2 cups steamed spinach. So colorful and delicious.


I have a couple of things to discuss but not tonight because I don't want to write a novel. The first thing I want to tackle is Late Night Snacks. I just can't bring myself to eat one! I know I need it and I do want it but I can't do it. Any advice?
