Let's Be Honest

Hello my loves! I can't believe its Friday already! Where has the time gone?! Or more importantly...where has my summer gone?! Yesterday at registration went well. I still have to fix a couple classes and then my schedule will be perfect. I am so excited about senior year, I have a feeling its going to be great.
Let's start out with last night's dinner...Coconut Rice topped with Sweet Potato Fries and Roasted Plantains. This was phenomenal! I love all of the sweet, nutty flavors in this dish and it was so simple to make. It also left my tummy feeling happy and full. I think I'll make this more often since it's so easy and delicious.

As much as I hate to admit it...the bag of Tortilla Chips and 3-layer hummus are GONE! I finished them in less than 2 days. But I'm not ashamed (okay, maybe a little)...I haven't had these treats in a long time and I made sure that I was truly hungry before getting my snack on. I have been a bottomless pit these past 2 days!

To start off my morning, I wanted something refreshing and light. I topped a Sliced Gala Apple with Shredded Coconut and thoroughly enjoyed that flavor combination while having a nice conversation with my mamacita.

A little while later I made a more substantial meal. Did you really think that an apple would keep me full for the morning?? Pssh. So I made a classic with a twist, Avocado Toast with a layer of hummus in between. Oh my, this was delightful! The tangy, slightly spicy hummus gave the toast and extra kick of flavor. It also boosted the creamy factor up 100%. I still love the original but this was a good way to use up the tiny bit of hummus that I had to scrape from the jar.

I was craving nothing but a huge pile of veggies for lunch. A Hugh Jass was definitely in order.
-baby spinach
-carrots
-pepper
-broccoli
-sunflower seeds
-cucumber
-roasted zucchini chips
-roasted okra
-Sweet Orange Chili Ketchup
Mmm, the roasted okra was my favorite part of this meal! It was so mushy and delicious. I'm totally stocking up next time I'm at the Farmer's Market.
I was so hungry when snacktime rolled around. I knew I needed something to tide me over until dinner so I heated up a serving of Coconut Rice and crumbled a Tropical Fruit Tart Larabar on the top. It was heavenly! The rice heated the Larabar slightly and all the flavors reminded me of a tropical island. Yum.
I received yet another Birthday Package in the mail today (you girls spoil me!), this time from Megan. She just got back from vacation and while she was on the islands, she bought be this amazing Lemongrass Coconut Soap. She said it reminded her of me right away, and when I smelled it, I thought the same thing! It is totally my scent! She also decorated the package with adorable flowers and a postcard with a sweet little note on the back. Thank you Megan! xoxo

10 Honest things?
Since I'm in kind of a rush...I've decided to include one fact with each new post. Here's number 1...
I love Leighton Meester. She does what she wants and doesn't care what other people think. I admire that in all women. I don't usually like celebrities because of the attitudes they have but she seems so down to earth. It helps that she is also on my favorite TV show ever...Gossip Girl.

I gotta make like a banana and split (haha) but the recipe for the wraps will be coming up soon! Enjoy your evening!

Every time I see your post I think I need to try some....but I so rarely buy avocado, they always go bad before I use them. I'll have to buy some with that specifically in mind!

Your breakfast with the coconut rice and sweet potato sounds so good! You're way more creative than I am when it comes to breakfast. I usually stick to oatmeal.

What lovely food, everything looks so fresh and tasty. I especially love the avocado on toast, that is one of my favorite go to breakfasts. Adding a layer of hummus is a great idea!

Such a tropical flavored post - that first dinner you posted sounded so amazing. Coconut rice, sweet potatoes, plantain. Oh my gosh - a meal from heaven for sure!

Hummus + avocado is so good - love that combo, and I'm the same way with tortilla chips. The bag never last long in our house either.

My Cuban Grandmother-in-law makes plantains almost every Sunday. Love them! I love the leftovers she sends home with us even more, though! The coconut rice sounds delightful too.

Hummus is always a favorite meal and snack option in my book, especially when paired with avocado and some satisfying carb (like chips or hearty bread). Yum!
