Back again. Shelby’s back…tell a friend.
I have missed you guys! How long has it been? Almost a week?! An insane week it was. I’m not going into detail but I had some of the best days I’ve had all summer…and some of the worst. Since the time of my last post, my appetite was gone. Even thinking of food made me sick but I was still feeling okay. Then on Wednesday I woke up with a worst migraine I’ve ever had (the only migraine I’ve ever had!). I went to work for about 2 hours but had to come home and rest. I also had a bad stomach ache and couldn’t eat anything. I ended up taking Advil for the first time in years only to have that upset my empty stomach. Fast forward to Thursday, I woke up feeling a bit better but not much. The only thing I could eat was Saltines (also something I haven’t had in a long time) and I was craving Ramen Noodles. I didn’t have the noodles, but I basically lived on Saltines for 2 days until I could eat more. When I could eat more food, I eased back into it. First I mashed up an Avocado and scooped it up with the Saltines. Kind of like my Avocado Toast. I’m feeling 90% better now, which is why I’m finally posting again!
All I’ve been craving is carbs recently, so I’ve been having bigger breakfasts like this one x2. Kamut Puffs with Nature’s Path Pumpkin Granola (my momma bought this for me), dark chocolate, and almond milk.
Lunch was so delicious and full of the healthy foods I wasn’t getting during those sick days. I don’t think I even touched a vegetable those 2 days. Today I made a Stir-fry that included…zucchini, sweet potato, broccoli, carrots, bell pepper, baby spinach, dulse, spices, and nutritional yeast. My body was so happy to eat these good foods again!
In case you don’t know what this is, don’t worry I’m going to tell you. It’s a Yucca Root and of course, I had to make fries out of it.
The root was a bit tough to cut in to. I found it to be like a coconut almost. With a hard exterior and a bright white interior. The flavor was pleasant and almost fruity. It’s not my favorite root vegetable, but it was fun to try. I wouldn’t buy it again because the ones I saw were so small and you only get a very tiny portion of fries. Or I could just be used to the Size 10 Sweet Potatoes I buy that I think the serving is small!
Tonight I’ll be going to bed early, I have work in the morning and need to catch up on sleep! Speaking of work…the Chicago Soy Dairy has re-launched their website Go Vegan Go! It has tons of ideas for Teese and Dandies along with event information and things of that nature. They even did a post about moi! Check it out and submit your ideas!

I found the yucca kind of tough to cut into as well! I bought a fairly large one from Whole Foods and it was hard for Evan and I to finish it off! In fact, I think we even threw away a few fries...

You're really amazing that you're trying to kick your ED's butt (I know what you're going through..they suck). You're really inspiring me to get through it too. Thank you!!

Ugh, sounds horrible! Glad that you are feeling better though. :) My friend has had mono for about a week now and has gone through some of the symptoms you had. Being sick is never fun.
Oh! Today I bought a Rutabaga, inspired by you! I can't wait to make some fries with it. :)

Glad your back to yourself mamacita :) Good to rest when ya need it... If you cme across another Yucca, try it mashed! Add some liquid (orange juice, coconut milk, olive oil, etc) You can also make chips (think plantain chips!) yum.. Kind of dry on it's own.

Glad you're feeling better! I had a migraine last week that eventually took me to the ER with dehydration due to an inability to keep down food OR liquid! I'm ready to see more of your delicious pics and friendly words.
Glad to hear you are feeling better. I've had migraines for years, take it from me: when they hit go hide until you feel better!

I'm so sorry you weren't feeling well ~ I suffer from migraines too and they're just terrible. Happy you're feeling a little better and getting back to your usual lovely eats : ) I could eat that stir-fry straight off the screen.

I got yucca chips at a restaurant once, and they were good. But I'm with you, they weren't worth running around screaming about. Just good.

im glad you are feeling better...i hate being sick. i always think its annoying to eat such blah foods. im a ritz girl myself when i need simple salty carbs to soothe my stomach, but i can recall my mom offering up saltines and ramen noodles, too, when i was younger. topping it off with avo is way classier ;) way to progress the solids in true foodie style.
that bowl of cereal with chocolate and granola makes me think i could enjoy being sick if your mom took care of me :)

I'm going to try Yucca....I've never really thought about it before. I'm always wanting to try new veggies to bake, soaked with coconut oil, which is how I usually make my sweet potato fries.
I like the idea of mashing it, too....

sadly making "fries" in the way you didnt doesnt really do the justice to cassava. try boiling it with some salt until tender. you can eat it like that your mash it up with a little nutritional yeast or margerine, like a mashed potato. its divine. i know you dont eat fried foods but if you ever do, yucca fried is way way way way way better than french fries. ;)

The way you describe feeling without your appetite and just feeling crummy in general, was me for about 8 weeks this summer. I'm just now recovering. :( Glad you're doing better so quickly!
Wow, yucca! Where'd you even buy that? I've always wanted to find it so I could make the Yucca quesadilla recipe from Vcon, but I never can!
