The Breakfast Club

Hey everyone! It's been a while, huh? Lolla was insane yesterday! Our booth was packed between 2 grills so there was heat and smoke coming from both sides. I don't think I have ever sweat that much in my life. But it is all worth it in the end because there were quite some characters there. I haven't really been home these past 3 days so its been hard to post. I'm usually extremely tired but I'm trying!


So the theme of this post is breakfast. I didn't have time to snap pictures of all my other meals and breakfast was the most decadent and delicious anyway.

Oatgurt with Almond Milk, Sauteed Plantains, Shredded Coconut, Artisana Cacao Bliss.

Sprouted Grain Toast spread with Hazelnut Butter and topped the shredded coconut.

Coconut Rice with Hazelnut Butter, Artisana Cacao Bliss, Shredded Coconut.

As you can see, I might be a little bit obsessed with coconut at the moment. It just reminds me that it is still summer and I should enjoy what's left of it. I also adore the texture it gives to otherwise plain meals.

Sorry to cut this short, I have things to do, people to see...
-work @ 9am until 4pm
-shower
-eat dinner
-friends house

Hazelnut butter looks delightful! You sounds very busy! I slept too much/not enough this weekend (14 hours one night, 3 the next), and that was about it. Just trying to recover from that.

Those sauteed plantains sound delicious in there! I love eating raw coconut (idk if that's weird or not lol). If you eat just a little section, it's the perfect snack! Didn't do anything too fun this weekend.. I made a scrapbook for my mom's bday.. and it made me realize how much i don't like crafts hehe. Have a great Monday!

i am in love with all ur creations!coocnut rice with the hazelnut butter and cocoa bliss. o.m.g. amazing. hazelnut and coconut are 2 of my favorite nuts/healthy fats. so good. loving the plaintains lately that u have been having, it looks so good. :)

I bet that toast with coconut and hazelnut butter was amazing! I haven't tried hazelnut butter yet, but I know I would love it.

You went to Lolla!? oh em gee my boyfriend decided not to go last minute & he was so bummed out ALL weekend lol I hope it was fun!-it's def not cheap. Ohhhh girlie I've missed commenting on your blog. I am LOVING the plantains in there-SO good! Happy belated birthday-so sorry I missed it!

sounds like you are having such an awesome time!!

I'm completely obsessed with coconut too! It's just the best. It makes everything (well, maybe not everything...but almost everything)...taste better!

I love coconut too...it makes almost any dish taste tropical with just a pinch or two of it.

I really want to try hazelnut butter. I recently tried sunflower seed butter and it is SO good. I can't eat peanut butter any more (it's my favorite too), so I've been trying other things. Everything else so far has been okay, but not great. I think I've seen you mention sunflower seed butter, but I don't remember. Mine is kind of runny, even after refrigerating and mixing. Is that normal? (It's annoying.) Good to see you posting again. :)

Yum, yum, and yum! Nothing wrong with coconut obsession- I have a feeling it's spreading around the vegan community like wildfire, what with all of the new coconut products to be found these days. Heck, I'm on the bandwagon for this one as well! ;)

So many delicious coconut eats! I'm a coconut fiend as well, so I love it. You always make me want to make some coconut rice.
