I had to get up early today to workout because I had work from 10-5. My workouts are usually around 2pm so I knew I wouldn't be able to fit one in unless it was before breakfast. I actually really liked working out early. It was a great way to get the blood flowing and mind clear for the day.
After my workout, I enjoyed a big Cereal Mess inspired by Heather.-Shredded Spoonfuls
-Kamut Puffs
-Unsweetened Vanilla Almond Milk
-Naturally Nutty Vanilla AB
-1/2 a sauteed Plantain
As some of you may know, I don't eat bananas. They give me horrible belly-aches and major bloating. I was a little skeptical to try a plantain but I wanted to see if the reaction would be different. It was! I didn't get a stomach ache or anything. It was a nice, sweet addition to my cereal and I will be buying them more often as they're pretty cheap too.
On the way to work I had a delicious snack that I forgot to snap a picture of. It was a fresh, organic White Peach with Chocolate Abu for dipping. Mmm.
This was actually yesterday's lunch but it was so good, I needed to post it. First, I made Tempeh for the first time! It was a big fear food for me a while back so I always had it sitting in the freezer. Then I just forgot about it. After looking for more natural protein sources, I remembered it and made this Orange Pan-Glazed Tempeh. It turned out great! No weird taste to it and a very unique texture. Seeing that it is made from soybeans, I thought it might cause an upset stomach but I was fine. I think because its fermented because I can eat Miso with no problem too.
I paired it with some Brown Rice and Brussels Sprouts to round out the meal.-butter lettuce
-steamed broccoli
-corn
-carrots
-Pineapple Salsa
I also had 2 Homemade Super Charge-Me Cookies from ED&BV! These were so fun to make and all the ingredients are so healthy. I replaced the maple syrup with Chocolate Abu and they still turned out delish! Is there anything Abu can't do?! I'm already halfway through my second batch! Now I'm off to watch a movie or two. I'm exhausted from the day and need to relax. Have a lovely night everyone! <3

P.S. - so glad that the plantains worked for you!!
just recently i have been working out earlier in the morning and i agree - it just gives me such a positive mindset throughout the day :)!
enjoy your night, sweets! xo
That's really cool that you could sub the maple syrup with Abu!! I'll have to try that somewhere, as my Pbu hasn't been getting much play in my house.
Love the news foods! Glad work is going so well! Your eats all look super yummy. Those cookies look delicious!
<3 jess

i love working out in the morning too! I feel like it give me so much more energy for the day. Do you just do yoga in the morning because that is my favorite way to wake up :)

Wow that tempeh looks fantastic! And of course the cookies do too :D
Have a fantastic night :)

your blog looks so beautiful! emily did an amazing job :D
i totally need to get on this abu train!
hope you have a great night!
That breakfast mess looks surprisingly appetizing. I've never tried plaintains though - I'll have to get on that, lol.
Brussel Sprouts are the yummiest little gems! I can't believe I use to hate them! I think it's because they reminded me of little brains! hahaha :-D
plantain oats, yum! i'm glad you're able to eat them. :)
the tempeh looks and sounds delicious. i love tempeh! and congratulations on being able to stomach the plantain! (what a weird thing to congratulate someone on, haha.) and you've just reminded me that i haven't had brussels sprouts in a loooong time. i miss them!
hope you had some nice downtime tonight. goodnight!
I'm catching up on the blog but just wanted to let you know that i love the new layout!!! WONDERFUL!
yum! i'm glad you like tempeh! i think i like it better than tofu.
also, i know that fresh sauteed plantains are great, but TJs also has some plantain chips that I think are delicious. more savory than sweet (unlike a sauteed plantain), but still yummy!
Have I told you yet that the new layout is exquisite? Because it is.
I do the workout before work and love it! I just know I wouldn't have energy to do it afterward!
LOVE the cereal for breakfast. Nice to see that a love of yours has returned :)
Cereal Mess, haha! Looks good to me. Mmm, tempeh!
When I first saw the tempeh, the texture of it reminded me of a large honeycomb. Honey-glazed tempeh in the future, perhaps? :P But I've never tried tempeh, so I'm not sure how those would go together.
i'm intrigued by the abu!
Hurray for tempeh and plantains! They look great. I am jealous of your job. That would be so awesome. I live in rural wisconsin and we don't have anything that cool near by.
Love the new layout, girlie!
Plantains for breakfast are so yummy. You should look up plaintain porridge and veganize it :)
XO

Just noticed that you have a recipe tab, now! Fantastic!

as always, the food looks great, esp your salads. they are like paintings! the blog makeover is nice as well.
Mmmm everything looks so good! And that cereal mess with the plantations, SO creative!
hey chica, i don't know if you check your email often, or if you usually only read the comments that people leave on posts, but i sent you a question to the sdearborn address i got from your contact page, just so you know!
Love the new layout! The food looks amazing as well. I must try orange-glazed tempeh; that sounds great. I've had the baking itch this week and I think I know what I'm going to make after seeing your Super Charge Me cookies ;)
Have a lovely day!
I love the way you combine things...like salads and cereal bowls. There's always an unexpected ingredient, like the salsa on the salad or the plantains or nut butter on cereal.
When I made my Pbu oats yesterday morning, I wanted to include fruit in my bowl but all I had were blueberries, and I thought that sounded weird with PB. But I seriously asked myself, "What would Shelby do?" And I was like, "Shelby would throw in those blueberries." And I did. And it was delicious!
that's awesome that the plantain didn't bother you! I've always wondered about that.
i think i need to buy some almond milk to try this abu...
I tried tempeh for the first time a few months ago and I really liked it. It had a very earthy flavor that I thought was interesting, but good. Love the new look on the site!
Working out in the morning always makes me so energized for the rest of the day, I love it. I also love plantains - I'm so glad you found a banana-like fruit that won't upset your stomach! Kind of like enjoying a pretend banana, haha!
Chocolate PBU is an amazing idea, I loved it better than the regular!
Again, awesome layout, enjoy your movie girl!
Love,
Meg
I am always so inspired by your cooking creativity. I always get great ideas from you.
I've always had green plantain in curry as a savoury dish or just fried with a savoury dipping sauce. That's a good idea for breakfast though, very filling! As for tempeh, I only ate it twice and I couldn't get used to the taste. Maybe I need to add in more flavour!
And I love the new banner!
I've never had plantains and want to try them so badly!! I love the new layout shawty..it is gorg and simple and cute! I haven't tried tempeh either..I am kind of scared though! I need someone to make it for me so I will be in love!
Ohhh tempeh is so good!! And it looks delicious with the rice and brussel sprouts. :)
And PS, just picked up the tj's pineapple salsa!! Soooooo excited to use it!
Oh, you are glorious! I had forgotten how wonderful plantains taste in breakfasts, and now you have reminded me! Must buy some now!! I actually hadn't noticed you don't eat bananas...
And your tempeh looks so gosh darn gourmet. Fabulous job!
Did working out in the morning affect your hunger level differently throughout the day? I am scared to work out early in the day because I think I might feel energized for a while, but then feel crazy exhausted and/or hungry later...lol.
Im happy the plantain didnt hurt your tummy! Looks yummy grilled like that!
I just got Eat, Drink and be Vegan! I cant wait to make those cookies! yum!
Plantains are great. I keep meaning to pick some up, because I loved them when I had them in Ecuador. Yum!
Yum...that recipe is my fave :)lovin the new digs chica- so you
Shelby,
I love working out in the mornings - such a great way to start my day! Your breakfast looks delicious - so happy to inpspire...and honored. :) That reminds me that I need to restock my plaintain. I just bookmarked that recipe for tempeh after seeing it on Hungry Yogini. You and I have such similar tastes - love that!
Love that you pan seared the plantains for your cereal, that sounds so fantastic! Little touches like that go a long way and I love to see so much put into every meal.
I have to work out in the morning otherwise I convince myself of other (less energetic) things to do!!
LOVE LOVE LOVE the new look - so light and fresh.
That Orange Pan-Glazed Tempeh looks so so good - it all does. Especially the Brussel Sprouts! YUM!
Hi Shelby. I find that non-organic bananas give me the same symptoms you experience. Organic bananas don't bother me. Perhaps it's all the pesticides used in non-organic, or the fact that bananas are a slave crop throughout the world, based on the exploitation of very poor populations, who suffer from working in constantly sprayed fields, with dramatically increased instances of cancer, birth defects and fertility problems.
Enough sad facts. Happy happy!
