Inspirational

Hey loves <3
Its still rainy and dark outside so all I've been doing is reading, sleeping, and watching trashy TV. I also went to get my haircut today and I'm going tomorrow to get it colored. Can't wait! I wanted to get it done before Tuesday because I have senior pictures. Tell me why they insist on doing pictures so early?! I'm not even a senior yet...let alone tan ;) Mmm, nothing like Blueberry Chia Muffins smothered in Pbu to end the night, too bad they're already gone! This Strawberry-Mango Salad was inspired by Sarah. I used
-butter lettuce
-baby spinach
-1/2 a mango
-fresh strawberries straight out of the garden
-Peanut Roasted Chickpeas
-almond clusters (crushed)
-Cumin Cinnamon Vinaigrette from ED&BV
It was phenomenal! The fresh fruits were great with the sweet, crunchy lettuce. The chickpeas and almonds added a great nutty contrast to the sweetness, and the vinaigrette was the perfect light dressing that didn't disappoint in flavor.


For the chickpeas I used the Pro Flavor of FitNutz PB and they turned out very tasty! I could snack on a whole batch in one sitting (but I controlled myself). Seeing as that was my last FitNutz sample, I would definitely order the full sized container of this stuff. It was delicious!
Part of my breakfast this morning was Ezekiel Toast w/ Pumpkin Seed Butter. This was such a great combination and with the Green Monster I had (which contained Sun Warrior), this breakfast was packed with protein and healthy fats to get me through the morning.
Taking more inspiration from bloggers, I made this lunch of Fresh Mango and Avocado with Coconut Rice, inspired by Courtney aka The Hungry Yogini. This was such a fresh, delicious pairing, and one that will be repeated over and over again.
As I whipped up some Blueberry Pudding (a la Heather), I thought to myself...am I really hungry? I took a bite and even though the stuff was heaven, I wasn't hungry at all. Sometimes I still struggle with this. I feel I should eat when I'm not even hungry, just so I can make sure I'm getting enough food. I need to realize that I don't need to finish every bite if I'm full, or make food if I'm not hungry. My body knows what it needs and when it needs it. Part of this is still the time thing. I must eat at this certain time or else...um I actually don't know what would happen. Today though, I skipped the snack and felt much better for it. I just put it in the fridge for some other time. Not everyday needs to be the same and not everyday will you need the same amount of foods. I'm learning people!

The best salad I've had this week. Absolutely finger-licking good! Yum!

Congrats on eating intuitevely today! I still struggle with telling myself that I don't have to eat when I'm not hungry. You've made such wonderful progress Shelby!

Coconut rice + mango + avocado = YUM for sure! I haven't tried that combo, but I can imagine it is delicious, AND filling!

the chia muffins with pbu look fantastic! these past couple of mornings i've topped my oatmeal with cmu! (pbu, except made with cashew butter.) it's so delicious. by the way i've never told you this before, but i think the "hugh jass" name is so cute!! i love it! that hugh jass salad looks particularly spectacular, shelby. i always love looking at your eats! your blog is without a doubt one of my favorites.

hope the rest of your friday is as relaxing as it's been so far! and for an idea of something to put on your blog...i think you should post pictures of your new hair after you get it colored tomorrow! :)

i need to be following suit to you a little more and making more salads. it's hot and making those are quick. i like the mango and avocado over rice idea. i wonder what it would taste like over quinoa? probably more protein that way. lookin' good, lookin' real good.

Its great that your focused on becoming more intuitive and in-tune with your hunger. Its definitely a process, and you're doing fabulous so far! Awesome.

I agree COMPletely, it's so hard to "skip" a snack, esp if you think back (I can!) to the old times when you might have skipped it for the wrong reasons ya know? It's so awesome to see your confidence and comfort! I'm always up for more kitty pics, food and the good ol' product reviews!

I am LOVIN that you made both the strawberry salad and a HUGH JASS! I had two big 'uns myself today, though I think I need to make that strawberry one with the peanut roasted chickpeas...YUM!

hi shelby! i've never commented before, but i just started my own blog and am trying to delurk!

your meals look delicious as always. avocado and mango is one of my favorite combinations! i also really struggle with intuitive eating, often feeling like i'm just as afraid of eating too little as i am of eating too much. i think we just have to take it slow - practice makes perfect, right? you've made so so much progress already!

I struggle with intuitive eating too. Often, I do not feel hungry but think I should be because I haven't eaten "enough." At some point I'm sure I'll get the hang of it! It's a process and you're doing great! Thanks for sharing.

I totally know what you mean about senior pictures. I have NO IDEA why they wanna take them so early, and then when you graduate and get your yearbook you look nothing like your photo! haha.

Senior pics already? That is quite early!

I don't think you need to change your blog cuz it's great already! But if you're wanting some change, then go for it! You could add a color background.

Your coconut rice with the mango & avocado? Amazing. So simple, but it sounds awesome - a great summer dish :)

Way to go on the intuitive eating front. Sometimes it can be hard to listen to your internal signs, but it's a process. You'll get there :)

PS - I love kitty pictures, so I wouldn't say no to some of those ;)
