For breakfast I made a HUGE Pumpkin Parfait. I used 1 container WholeSoy & Co plain yogurt, 1/2 cup pumpkin puree (mixed with spices and agave), 3/4 cups Shredded Spoonfuls, and 1 pear. This was so pretty to put together and so delicious to eat. I was pretty stuffed afterwards and this left me full and energized for about 4-5 hours!!! I didn't need a mid-morning snack at all.
I did makes these cookies though. They are the Gingerbread Oatmeal Cranberry Cookies from The Innocent Primate Vegan Blog. I needed something easy, fast, and full of flavor and these did not disappoint! I had 3 for my afternoon snack =P
Lunch was the Chestnut Casserole from V'Con. It had butternut squash, caramelized onions, white beans, and chestnuts in it. Along with some simple seasonings, this dish was fabulous! It had so many different textures and flavors which made eating it enjoyable. I also crumbled a slice of ezekiel bread on top because I didn't add the crumb topping.After lunch we opened more presents, talked to our family in AZ via our new webcam, and IMed my uncle in Iraq. All in all, I had a good holiday even if it doesn't really feel like Christmas.
I've been super hungry all day long (?) and so I made a bigger dinner than usual. I heated up some Snobby Joes on a slice of ezekiel and roasted some brussels sprouts in some salt and pepper. A great way to end the day of delicious eats.
Present time! I got a New York Calendar (since I want to move there), Vegan Lunch Box, The Real Food Daily Cookbook, A cute daily advice book for every day of the year, Vegan with a Vengeance (I had both RFD and VwaV from the library but loved them so much I had to put them on my list), a new journal, Vegan a Go-Go, and a gift card to my favorite spa.
In this picture: A Clarisonic Skin Brush (!!!), Victoria's Secret Pj's, A Northface Jacket (since I get so cold), 2 candles, Miss Dior Cherie perfume, Nail Polish, a Mug with my name on it, and some new body wash. I also got more things in my stocking but they are just little things.I couldn't be happier with what I received for Christmas but I really love just being with my family. The looks on my brother's faces were so funny and put a huge smile on my face. I'm so thankful to have all my family in my life and so blessed to be able to share time with them as much as I do. I hope you all had very Happy Holidays and that you all spent time with the people you love.

Sounds like a wonderful Christmas! Great gifts! I got the same Pj's in red! My mother in laws makes us (her, me, and my brother in laws girlfriend) wear matching pjs on Christmas morning! :)
