Best. Pancakes. Ever. I know I say that about almost every recipe I try but these were so amazing. I based the recipe off of Peanut Butter Boy's recipe and they turned out so good. I love yogurt in pancakes and the pumpkin is just perfect for the colder months. These pancakes are a little more mushy in the middle but that's what I love about them. Here is my version...Pumpkin Pie Pancakes
(adapted from Peanut Butter Boy)
1/2 cup rolled oats
1/2 cup WholeSoy & Co plain yogurt
1 1/2 tsp Ener-G Egg replacer (just the powder)
1/2 cup pumpkin puree
1/4 cup applesauce
2 tsp soymilk
dash of cinnamon
Add all in blender and blend until smooth. Use immediately or store in fridge overnight. If you leave it overnight add a little more soymilk to thin it out. Heat a non-stick skillet to medium heat, using 1/8 cup measure, scoop batter into pan. Cook until browned on bottom and sturdy on top. Flip and cook 2-3 more minutes. Makes 4-5 medium sized pancakes.

After I ate breakfast my little brothers wanted to make Christmas cookies so I took out some Sugar Cookie Dough (recipe from Happy Herbivore) I had in my fridge and started rolling em out! They helped me punch out the shapes and add the sprinkles, it was so cute. And I can tell you now that they are delicious because the little ones would not stop eating the raw dough! They would sneak pieces every time I wasn't looking. Little stinkers.
Ready for tomorrow! They had to be hidden so no one would eat them.
I was busy cleaning, baking, wrapping, and getting ready for the day so I ended up just having a quick lunch. I had some leftover Minestrone with 2 slices of ezekiel bread. I used one slice to dip in the soup (AMAZING by the way, try it next time. Ezekiel bread is so good that way.) and the other I spread with some fig spread for dessert. So good and comforting.Snack was just a bowl of Shredded Spoonfuls heated in the microwave. They got so warm, they turned into an oatmeal-like consistency. Mmm, Mmm. I don't have a picture of dinner either since it was the same thing as yesterday and not too photogenic. I'll give you this though...
It's homemade dried apple rings. I had them for dessert and they were fabulous! It's so easy to make too. I just used 2 apples, cored and cut, then dried them for 2 hours in a 200 degree oven.
