I got this idea from Kath's Blog and knew immediately I had to make this. (I'm a big fan of carrot cake!) I did make a lot of changes but kept the general idea...so here is my version...

Carrot Cake Oatmeal:
1/2 cup oat bran
1 cup water + 1/2 cup almond milk
1 carrot, grated
2 tbsp diced mango or pineapple
2 chopped dates
1 tsp. Vanilla extract
A dash or two of... Cinnamon, Nutmeg, Allspice, and Ground Ginger
pinch of salt
Frosting:
2 tbsp plain or vanilla coconut yogurt
1 tsp agave nectar or to taste
Combine all ingredients for oats in a small pot. Bring to a bowl, lower to med-low heat, and stir until very thick. While the oats are cooking make the "frosting". Stir together the coconut yogurt and agave in a small bowl. When oats are done, pour into a bowl and top with frosting and a dollop of nut butter (not pictured). Enjoy a guiltless delectable "dessert" =)
