I bet you would never guess that this is what I had for breakfast. Well you'd better believe it because sometimes I find myself craving something savory for breakfast and a girl can only make so many tofu scrambles in a week! Right when I got up I plugged in my rice maker and cooked up some brown basmati rice. When it was almost done, I sauteed up some kale with ginger, garlic, salt and pepper. So simple and so delicious! I've never really had plain kale before so this was a pleasent surprise in taste. I also made my favorite Blackened Tofu from ED&BV. I've made this so many times before that I just mix the spices beforehand and double the recipe. That way anytime I want to make it, I can just pour out some of the spices and make the tofu. Dinner for breakfast is amazingly good and gave me so much needed energy so I could work out a little later in the morning.
For lunch I had been planning to make pizza so I made the Pizza Dough from La Dolce Vegan. I just found my mom's stand mixer and lemme tell you, I will never knead my own dough again! I know your thinking i'm lazy but last time I tried...it ended up sticking to everything! This way is foolproof and you can do other things while it's kneading. I actually ended up making Calzones which were so easy. I just took a little bit of dough and rolled it out, then filled it with a tofu-mushroom-spinach mixture and pasta sauce, then folded it up. I can't remember how long I baked it...until it was browned I guess. They were really good, and I don't miss the usual cheese in traditional calzones. I also had some leftover dough so I put it in the freezer for later use...maybe a delicious pizza!

Those calzones, ohmygosh! They look fabulous! I still haven't gotten my calzone fix since I became vegan...and it's been a year now!
That was your breakfast?! Wow, how healthy! Eating like that for breakfast sounds like a great way to start out the day, with a nice even blood sugar. It always feels good to get in your veggies in your first meal of the day! That is actually what I eat for dinner all the time -- kale, brown rice or bulgur or quinoa, and tofu. I am planning to try that blackened tofu, maybe this week. It looks really good!
I know that I HAVE to try the blackened tofu now after hearing all of your rave reviews! That's a great idea to mix the spices ahead of time. Your meals always look so delicious...and give me great ideas! :0)
I wish I could eat like that for breakfast! I always crave oats, pancakes, or waffles, I wish I could change my tastebuds to crave something savory!

Yum, that looks good~~! p.s. im totally illogical with foods, I prefer to eat desserts at breakfast, "breakfast" at dinner... and I have been known to eat non-traditional foods (like cold vegan piza or soup) for my breakfast!
